  • sieve;
  • a set of dishes of different volumes;

Vegetable oil 2-3 tbsp. l
Salt taste
Ground black pepper taste

Step cooking

  1. Rinse and peel 4 medium potatoes and half the onion. We rub them on a special grater by hand or using a food processor. You can also use a juicer: pour out the juice, and use the cake for potato pancakes.
    Peel and chop the potatoes on a grater, combine or meat grinder.
  2. Put the potato and onion mass on a sieve and carefully squeeze the remaining juice to make the dough as dry as possible. So potato pancakes will not creep in the pan.
    Tilt the potato mass onto a sieve and squeeze the juice as much as possible.
  3. Add to this mass 1 tsp. flour for a better binder, salt to taste and add ground black pepper and other spices (for example, a ready-made mixture for potatoes). Mix everything until smooth.
    Add flour, salt and pepper.
  4. Remove the skins per 100 g of bacon and chop it into small pieces. Pour 1 tbsp into one of the pans l vegetable oil, put it on a slow fire and send the greaves to fry for 5-7 minutes.
    In a pan, fry the sliced ​​fat.
  5. The remaining half of the onion is cut into small cubes and after 5-7 minutes we send them to the future cracklings. Our goal is to bring lard and onion to a golden color. The fat is fried longer, so you need to start with it.
    Grind onions and add to the pan to the bacon.
  6. Pour 1-2 tbsp into the second pan. l vegetable oil, turn on the maximum heat and let the oil heat. We make portioned potato pancakes from potato mass, giving them the appearance of a thick cake. Fry them on each side for 2-3 minutes, turning over with a spatula. Draniki should be fried, golden, with no signs of burning.
    Fry potato pancakes on both sides until golden.
  7. Remove excess oil from a frying pan with ready-made pancakes. We shift ready-made greasy cracklings with onions from the first pan here. The dish is ready, it can be served to the table. Serve draniki need hot, as they cool when they lose their taste, aroma, and stop crunching. You can decorate potato pancakes, in addition to cracklings, with sour cream and chopped herbs.
