Syrup preparation

  1. In an iron bowl, mix 1 kilogram of sugar and 1 cup of water. Stir.
    Mix water with sugar.
  2. Put the syrup on a small fire. Bring to a boil and boil for 1 minute. Foam will form on the surface and must be carefully collected.
    Cook the syrup until sugar is completely dissolved, collect the foam.
  3. Turn off the heat and let the syrup cool for 3-5 minutes - it should become transparent. Remove the foam from the syrup again.
    Ready syrup should be transparent.
Did you know? The main requirements for utensils for cooking jam: it should be quite wide and low. The pelvis is best suited. It should be brass or copper; stainless steel utensils are also often used. If you intend to use an enameled bowl, make sure that there are no cracks on it. Quite often, for making jam, they take aluminum dishes.

Fig preparation

  1. Rinse the figs thoroughly under running water. It will need about 1.2 kilograms. Remove the ponytails - they are too hard and will fall into the jam.
    We wash the figs, cut the tails.
  2. Pierce each berry with a skewer or a toothpick in several places. This will allow sugar syrup to thoroughly soak the berries.

First heat treatment

  1. Put the syrup on the fire and bring to a boil. Add pre-prepared figs to the syrup.
    Bring the syrup to a boil and put figs in it.
  2. Stir occasionally to warm all the berries evenly. Cook until boiling syrup again. Let the jam boil for 1-2 minutes, then remove from heat.
    Cook with constant stirring.
  3. Leave the syrup to cool completely overnight or for 5-6 hours.
    After boiling the syrup, remove the bowl from the heat, cool the jam.
Did you know? If you want to give oriental notes of jam, then add nutmeg, cloves, cardamom, ginger, rosemary or cinnamon. You need to add a little bit, at the tip of the knife, so as not to interrupt the taste of the fig itself.

Second heat treatment

  1. Rinse the lemon. Cut 50 grams of lemon first into thin rings, and then into quarters.

  2. Put a bowl of jam on the fire. Bring to a boil. Cook jam after boiling for 10-12 minutes, stirring constantly. The syrup should thicken a little.
    We bring the jam to a boil again.
  3. After 7-8 minutes, add chopped lemon to the jam.

  4. Boil the jam for another 3 minutes, then remove from heat. Let the jam cool.
    Remove the bowl from the heat again and cool the mass.

Third heat treatment

  1. Put the bowl on a slow fire and boil. Cook for 5-7 minutes (no longer needed, otherwise the jam will turn out to be very viscous).
    The third time we bring the jam to a boil.
  2. Remove the bowl from the heat. Pour jam into pre-sterilized hot jars and cover them with a lid. Leave the cans to cool completely.
    Pour the jam into sterilized jars.
  3. After this, the jars of jam can be cleaned in a cool place where they will be stored. The dish is ready. Enjoy your meal!
