  • stainless steel rectangular tray;
  • kitchen scales and other measuring accessories;
  • pan;
  • cutting board;
  • sharp knife;
  • paper towel;
  • cling film.

Ingredients

medium sized mackerel 3 pcs.
salt 60 g
granulated sugar 40 g
Bay leaf 3-4 pcs.
allspice 5-6 peas
black pepper 5-6 peas
clove 5-6 buds
bottled water without gas 1 liter

Step cooking

Prepare the fish

  1. Thoroughly wash three medium-sized mackerels in cold tap water.
    We wash the carcass of a mackerel.
  2. We cut off the fins, head, tail, and then carefully take out the insides, after making a thin cut throughout the belly.
    Cut off the carcasses of fish heads, gutted.
  3. Rinse the fish again with running water, and then wipe it dry with paper towels.
    Rinse the carcasses again and dry.

Prepare the brine

  1. In a small pot, pour 1 liter of bottled water without gas.
    To prepare the marinade, pour water from a saucepan.
  2. Bring the liquid to a boil, and then send 60 g of salt, 40 g of sugar, 3-4 bay leaves, 5-6 peas of allspice and black pepper, and 5-6 buds of cloves to it.
    Add salt, sugar, bay leaf, peppercorns to the water.
  3. After boiling again, reduce the heat to low and boil the brine for 3-5 minutes, stirring it periodically. Be sure to check whether sugar and salt have dissolved, if not, boil the brine until they are completely dissolved. We remove the solution from the fire and allow it to cool to room temperature naturally.
    Cook the marinade.

Mackerel salting

  1. Put the prepared mackerel in a rectangular stainless steel tray. Use of a plastic container or glass container is allowed.
    Put the prepared fish in a deep container.
  2. Fill the fish with brine cooled to room temperature along with spices. Make sure that the liquid covers the mackerel completely. In no case do not fill the fish with hot brine, otherwise the mackerel will boil and all efforts will be wasted.
    Fill the fish with a cooled marinade.
  3. Hermetically close the container with cling film or a lid.
    Tighten the container with fish film or cover with a lid.
  4. We send the tray with mackerel to the refrigerator for exactly two days. During this time, slightly shake the container 1-2 times a day.
