Simple Tomato Rice Chicken Soup

Kitchen appliances and utensils: stove, 5-liter pan, frying pan, cutting board, knife, spoon, spatula.

Ingredients

Chicken legs 2 pcs.
Onion 2 pcs.
Carrot 2 pcs.
Water 3 l
Potatoes 300 g
Rice 100 g
Tomato paste 70-80 g
Adjika 1 tbsp. l
Ground sweet paprika ½ tsp
Ground black pepper taste
Bay leaf 1 -2 pcs.
Salt ½ tbsp l
Vegetable oil (for frying) 2 tbsp. l
Frozen dill 1 -1.5 Art. l

Step cooking

Cooking broth

  1. We wash two legs well. We clean and wash two carrots, two onions and 300 g of potatoes. One hundred grams of rice is well washed. Pour cold water (3 liters) into a large pot. There we throw one whole onion, one carrot and put 2 chicken legs.
    Pour water into the pan, put chicken legs there, as well as whole onions and carrots.
  2. We cover the pan with a lid and put on the stove. After boiling the broth, reduce the heat to medium, after removing the foam.
    Bring the broth to a boil, remove the foam and cook over low heat.
  3. The legs should cook for about 30-35 minutes, after which they need to be removed from the pan. We also take out vegetables that we no longer need. Let the legs cool down.
    We take out the ready-made legs from the broth, vegetables too.
  4. Cut the potatoes into cubes or cubes.
    Peel and cut the potatoes in pieces.
  5. In the resulting broth we put washed rice and potatoes. After about 20-25 minutes, the potatoes and rice will be ready.
    We spread the potatoes and washed rice into the broth.

Making Soup Dressings

  1. Finely chop one onion.
    For frying, chop the onion.
  2. Three carrots on a medium grater.
    Rub the carrots on a grater.
  3. Pour 2 tablespoons of sunflower oil into the pan. We put onions there and fry until transparent, stirring with a spatula.
    In a preheated pan, fry the varnish until golden.
  4. Add the grated carrots to it. We pass it all for about 2-3 minutes.
    Add carrots to the onion and fry for a few more minutes.
  5. Add 70-80 g of tomato paste to the sauté, add a little water. Tomato paste can be replaced with tomato juice or grated fresh tomatoes.
    Add tomato paste and some water to the roasting.
  6. Cook for another 3-4 minutes and remove from heat.
    A few more minutes we cook and remove from the stove.
Important! If you want the soup to turn out to be more dietetic, then in the “Cooking dressing for soup” step you should not fry onions and carrots. They, like other components of the dressing, should be extinguished without sunflower oil with the addition of water until tender.

The final stage

  1. After removing the skin from the legs, we separate the meat from the bone and cut it into cubes.
    From the cooled legs, we separate the meat, cut it.
  2. Add the meat to the pot to the potatoes and rice.
    Put the sliced ​​meat into the soup.
  3. Add salt, pepper to taste and mix. Add 1-2 bay leaves, add sweet paprika (1/3 teaspoon).
    Add salt, pepper, add bay leaf and paprika.
  4. Mix everything carefully. After 2-3 minutes, put the cooked dressing in the soup with the addition of adjika (1 tablespoon).
    Put the frying in the soup, and also add a spoonful of adjika.
  5. We put 1-1.5 tablespoons of frozen dill and bring the soup to a boil. Instead of frozen, you can put dried dill. The taste will be completely different. Another favorite among herbs is parsley. It can replace dill.
    At the very end, add chopped dill to the dishes.
  6. Before serving, take out the bay leaf.
