Frozen butter 250 g

Step cooking

  1. In 300 grams of premium flour, add baking powder for dough (11 grams). Sift the mixture into a deep bowl with a capacity of 4 liters (or more).
    Combine flour with baking powder and sift through a sieve.
  2. Add a bag of vanilla sugar (8 grams). Mix the contents of the bowl well.
    Add vanilla sugar.
  3. Grate 250 grams of frozen butter on a coarse grater. When grinding, periodically mix portions of the resulting oil crumbs with flour.
    Grate cold butter directly into the flour.
  4. After you rub the whole piece of oil, rub the contents of the bowl with your hands until the butter flakes are medium in size.
    Grind flour and butter with crumbs.
  5. Add 300 grams of fresh cottage cheese to the bowl. Shuffle.
    Add cottage cheese to the butter and flour crumbs.
  6. Break 1 chicken egg in a separate deep plate, stir the protein with the yolk with a fork. Pour the egg mash into the batch.
    Beat the egg separately and add it in the curd-flour mass.
  7. Knead uniform dough quickly. If the mass is very sticky, add more flour (30-50 grams).
    Knead the soft dough.
  8. Knock down the dough in a lump, divide into 2 equal parts, form a ball from each. Put each ball in a plastic bag or wrap it with cling film. Put the blanks in the refrigerator for 1 hour.
    We divide the dough into two identical parts, wrap them in bags and put in the refrigerator.
  9. Sprinkle flour on the work surface (from the remaining 50 grams). Put the dough from the bag on the mat, sprinkle flour on top. Roll the ball with a rolling pin into a circle 3-4 mm thick.

  10. Cut a circle with a knife into 24 approximately equal parts (“petals”). First divide the circle into 4 segments, then cut the segments into smaller pieces from the center to the perimeter.
    With a knife, divide the dough into 24 sectors.
  11. On a wide part of the piece, put a little strawberry jam (a third of a teaspoon), slightly distribute it over the piece.
    For each triangle of dough we spread a little jam.
  12. Roll the bagel, starting at the wide, spread edge of the segment.
    We roll the dough with a roll, forming a bagel.
  13. Put the resulting bagels on a baking sheet covered with a sheet of parchment. Try to keep the tip of the "petal" at the bottom. Do not stack products tightly, there should be a gap between bagels.
    We spread the bagels from the cottage cheese for the baking sheet covered with parchment and send it to the oven.
  14. Bake the muffin in the oven, heated to 200 ° C, for about 20 minutes. All products are not placed on one baking sheet, therefore they are baked in batches several times.

  15. Repeat all steps with the second part of the test. Sprinkle the cooled pastry with powdered sugar (100 grams).
