Stollenka's Christmas Cookies - Holiday Recipe

Raisins 150 g
Orange juice 4 tbsp. l
Cottage cheese 150 g
Almond 50 g
Orange zest ½ orange
Powdered sugar 50 g
Wheat flour 300 g
Baking powder 2 tsp

Step cooking

Filling

  1. Steam 150 g of raisins with boiling water for 5-10 minutes, then rinse it well. In a bowl with raisins, add 4 tbsp. l orange juice and mix. Leave on for 10-15 minutes, stirring occasionally so that the juice is completely absorbed.
    Stirred in boiled water and washed raisins, mix with orange juice.
  2. Pour 50 g of almonds with boiling water for 3 minutes.
    Pour almonds with boiling water.
  3. Then drain the water, rinse the almonds and remove the peel (almonds can be replaced with other nuts).
    Drain almond water and easily peel it.
  4. Dry the nuts with a towel or dry cloth and chop finely with a knife.
    We chop the prepared almonds with a knife.
  5. Then add them to the raisins and mix.
    Mix almonds with raisins.
Did you know? If you cook "Shtollenki" for adults, then orange juice can be replaced with tasty, aromatic alcohol.

Dough

  1. Mix 75 g of sugar with the zest of half an orange (grate the zest on a grater or chop finely).
    Mix the orange zest with sugar.
  2. In a separate bowl, whip 100 g of butter (whisk until the butter becomes light and lush - 3-4 minutes).
    Separately, beat the butter with a mixer.
  3. Add sugar with zest and 8 g of vanilla sugar to the whipped butter. Beat again with a mixer.
    Add vanilla sugar and sugar mixed with zest to this mass.
  4. Add 150 g of pureed cottage cheese to the butter with sugar in portions, continuing to beat for 1-2 minutes.
    We introduce soft cottage cheese into the oil mass, mix with a mixer.
  5. Add to your raisin filling 30 g flour (1 tbsp. L.) And pour it into a bowl with the resulting whipped mass. Shuffle.
    After mixing the nut filling with flour, we introduce it into the dough.
  6. In a separate plate or bowl, mix 270 g of flour with 2 tsp. baking powder.
    Combine flour with baking powder.
  7. Add flour with baking powder to the mass prepared before this, and knead the dough. You can knead the dough with your hands, it should turn out soft, thick and not stick.
    Add flour and knead the dough.

Baking cookies

  1. Turn on the oven 200 degrees. While the oven is warming up, roll the dough into a layer (about 1 cm thick), if the dough sticks when rolling - sprinkle it a little with flour.
    Roll out the dough into a fairly thick layer with a rolling pin.
  2. Divide the resulting dough cake with a knife into small squares (3 by 3 cm), making strips of dough first vertically and then horizontally. It should turn out about 45 pieces.
    Divide the dough into portioned squares.
  3. Cover the pan with parchment paper and transfer cookies to it. Make sure that the cookies do not stick together and are at a distance of 1.5-2 cm from each other. If the cookie does not fit on your pan, then you can bake it in two batches.
    We spread the cookies on a baking sheet, which must be covered with parchment.
  4. In a preheated oven, place a baking tray with cookies for 20-25 minutes, until golden brown.
    We send the blanks to the oven.
  5. Let the cookies cool for a couple of minutes.
    After baking, we make cookies for several minutes.
  6. Melt in a saucepan 35 g butter and grease the top of the cookies with it.
    Grease the slightly cooled cookies with melted butter.
  7. Oiled cookies sprinkle with powdered sugar (50 g). Before use, cookies should be infused for 3 days. Such cookies are stored for 3 weeks.
    Sprinkle our Christmas cookies with powdered sugar.
