Ingredients

  • shank - 2 pcs.
  • beer - 1.5 l
  • garlic - 5 cloves
  • onions - 1 pc.
  • carrots - 2 pcs.
  • bay leaf - 2 pcs.
  • peppercorns - 20 pcs.
  • hot pepper - 1 pc.
  • anise - 2 pcs.
  • cloves - 5 pcs.
  • salt - 2 tbsp. l
  • honey - 1 tbsp. l
  • mustard - 1 tbsp. l
  • soy sauce - 3 tbsp. l

Step cooking

  1. We take 2 shanks, clean them, rinse and pierce with a knife in several places. We wash the handle and in several places we make cuts with a knife.
  2. Cut 5 cloves of garlic into small pieces and insert them into the cuts on each knuckle. Insert the cloves of garlic into the cuts in the shank.
  3. We shift the shanks into the pan, pour them 1.5 liters of beer and leave to marinate for at least 6 hours. Fill the shank with beer.
  4. Also in the pan we put 1 cut head of onion, 2 peeled carrots, 2 bay leaves, 1 dried hot pepper, 20 peas of black pepper, 2 anise stars, 5 cloves and 2 tbsp. l salt. Add the spices.
  5. Pour water into the pan until it completely covers the shanks, and cook them for about 2 hours over medium heat. Add water and put the knuckle to cook.
  6. In a stewpan, mix 1 tbsp. l mustard, 1 tbsp. l honey and 3 tbsp. l soy sauce. We prepare a sauce based on mustard, honey and soy sauce.
  7. We send the stewpan to a small fire and heat the sauce until all the ingredients are combined into a homogeneous mass. Mix the sauce and cook.
  8. We take the shanks out of the pan, shift them into a baking dish and coat them with prepared glaze. Put the boiled shank on a baking sheet and grease with caramel sauce.
  9. We send the form to the oven preheated to 180 ° C for 45 minutes. The knuckle in beer, baked in the oven, turns rosy, aromatic and very tasty.
