Kitchen appliances and utensils: a deep bowl with a lid, scales, measuring cup, shape, baking sheet, oven, tablespoon or wooden spatula.

Ingredients

Leaven 40 g
Rye flour 450 g
Water 330 ml
Salt 10 g

Step cooking

  1. We take a deep container, put 40 g of sourdough into it and fill in 330 ml of cold water. Sourdough can be prepared at home or bought ready-made. Next, sift 450 g of rye flour into the same container and add 10 g of salt.

  2. Knead the dough first with a wooden spatula or a tablespoon, and then you can knead it with your hands. Rye dough is different from wheat dough - it does not become very soft and elastic due to its low gluten content. We cover the bowl with the dough with a lid or cling film and leave to approach for 8 hours.

  3. After that we take out the dough from the bowl and knead again for 1-2 minutes on a board sprinkled with rye flour. We also dust the mold for future bread with flour, after kneading the dough we place it inside the mold and leave for another 1.5 hours.

  4. Preheat the oven to 180ºС and place the pan in its bottom. Bread is placed either in the form, or we take the dough out of it directly on the baking sheet. Bake at the bottom of the oven for 15 minutes.
