Olivier is the New Year’s salad. Lucien Olivier, the owner of a Moscow restaurant, first introduced it in the second half of the 19th century. Then the composition of the mandatory ingredients were hazel grouse, partridge, cancerous necks and the tongue of a young calf. The dressing was served with mayonnaise, prepared by Lucien using a special mysterious technology. The recipe, which is considered classic today, is fundamentally different from the original source.

There are many cooking options for this French-Russian salad. Culinary specialists tailored it to their preferences, replacing the original products with more affordable ones. However, there is a basic, classic recipe.

Double classic

Two recipes for this salad can be called classic at once. The one suggested by Mr. Olivier. And the one that became beloved by the Soviet mistresses. They have little in common. Interestingly, the author of the dish did not reveal his secret, so the cooking technology is only approximately interpreted.

Version of Lucien Olivier

Features In some sources, hazel grouse suggest replacing with quail, turkey or chicken.

Ingredients:

  • tongue of a young calf - 70 g;
  • hazel grouse - half a carcass;
  • cancer necks - three pieces;
  • fresh cucumber - one piece;
  • pickled capers - one teaspoon;
  • olives - three to five pieces;
  • salt to taste;
  • mayonnaise;
  • potatoes - two pieces;
  • lettuce - to decorate the dish.

Your actions

  1. Boil poultry, tongue, potatoes and crayfish in separate containers.
  2. While still warm, chop the boiled ingredients into cubes.
  3. Grind cucumber with the same cubes.
  4. Grind olives and capers as desired.
  5. Mix all the ingredients.
  6. Add salt to your taste.
  7. Season with mayonnaise, mix again.
  8. Serve on a plate pre-decorated with lettuce leaves.
  9. Garnish with greens.

Features The more famous variation "Olivier", dating back to the Soviet era. Many people remember the traditional New Year's salad with sausage from childhood. All components must be fresh and of high quality. Buy the sausage of the company that you have already tried and that you trust. If the “Doctor's” is replaced with boiled beef, then it will be meat “Olivier”. This option will be more satisfying. A valid substitute is ham.

Ingredients:

  • Doctoral sausage - 400 g;
  • canned green peas - one can;
  • carrots (medium size) - two pieces;
  • potatoes (middle-aged, middle) - three to four pieces;
  • perfect eggs - five pieces;
  • pickled cucumbers - three to four pieces;
  • salt to taste;
  • mayonnaise.

Your actions

  1. Boil separately washed, but “in uniform” potatoes and carrots, as well as eggs (hard boiled).
  2. Clean the cooled boiled ingredients.
  3. Open the peas, remove the pickle from the jar.
  4. Grind all components in cubes in any convenient way.
  5. Mix all the ingredients.
  6. To salt.
  7. Season with mayonnaise, mix.
Cucumbers use salted or pickled. If you take the barrel, then you do not need to salt the salad. After refueling, try Olivier and add spices if necessary. For all ingredients to be the same size, it’s convenient to use kitchen assistants. For example, a vegetable cutter.

Modern snack options

Olivier is considered a traditional New Year's salad. But the New Year's feast falls precisely on the period of fasting. How to be the one who observes it? Or those who don’t eat meat at all? There are options for any occasion.

The lean Olivier recipe is not much different from the base. You need to replace regular mayonnaise with lean. Sausage or meat - for mushrooms. Canned (for example, champignons) will cope better with this role, since boiled ones do not have a very pronounced taste.

Vegetarians can also cook Olivier without changing their dietary principles. Remove the meat component, replacing it with canned mushrooms. Leave all vegetables. Eggs replaced with Adyghe cheese (if permissible). You can add an apple to your taste, it will add a spicy touch to the salad. The presence of onions and herbs in the salad is not prohibited. Dressing in this embodiment is a vegetarian mayonnaise.

Ingredients:

  • perfect eggs - five pieces;
  • fresh cucumbers - two pieces;
  • salted salmon - 300 g;
  • peas (or corn) - one can;
  • onions - one thing;
  • sour cream (for dressing) - about 150 g;
  • salt and pepper to taste.

Your actions

  1. Boil potatoes, eggs and carrots. Peel and cut after cooling.
  2. Open canned peas, drain the brine.
  3. Cut the remaining ingredients.
  4. Stir, add salt and pepper to taste.
  5. Season with sour cream.
  6. Garnish with greens.
To taste, you can use fresh cucumbers mixed with pickled (in half). Red caviar is good for decoration.

Olivier salad without mayonnaise

"Royal"

Ingredients:

  • cancer necks - about 100 g;
  • chicken breast - 100 g;
  • cucumbers (salted or pickled) - 40-50 g;
  • quail eggs - two to four pieces;
  • potatoes - 150 g;
  • carrots - 50 g;
  • canned peas - three tablespoons;
  • fresh cucumbers - 100 g;
  • fresh apples - 40 g;
  • onion feathers - to taste;
  • lemon - two to three slices;
  • capers - 10 g;
  • granular mustard - 15 g;
  • Worcester sauce - 10 g;
  • dressing mayonnaise.

Your actions

  1. Boil vegetables and chicken.
  2. Cut the apple and mix with the juice of half a lemon and let stand a little.
  3. Grind all products.
  4. In a deep container, connect everything.
  5. Pour in Worcester sauce, salt, mustard and mayonnaise, mix.
The recipe allows the replacement of cancer necks with shrimp.

Replace mayonnaise in recipes with a mixture of sour cream with mustard, natural yogurt (with the addition of black pepper), salted kefir, a mixture of sour cream with Caucasian adjika, mayonnaise or sour cream based sauce.
