This salad is known under several names - “Tbilisi”, “Sun of Tbilisi”, “Old Tbilisi” and even “Tiflis”. It is cooked with slight differences - as you know, every housewife has her own cooking secrets, and beef in a traditional recipe is often replaced, for example, with chicken breast. But we decided to please you with a step-by-step recipe with a photo of the classic Tbilisi salad and recipes for several adaptations.

For many, Georgia is associated with dishes such as khachapuri, kharcho, which have already become international. And there’s nothing even to say about barbecue, since it is the “visiting card” of the state. Local hospitality is known in almost all corners of the planet. Hours of feasts, tables that are bursting with dishes, ornate toasts, dragging on for hours, have become a byword.

The preparation of dishes in national cuisine is based on two principles - spices and spiciness. There is probably no such dish wherever they are used. Necessarily a combination of meat and vegetables. Salads delight with a variety of options and designs. Many of them were “Russified” and adapted to the taste preferences of residents of different countries.

Classic Tbilisi Salad Recipe

Features. Tbilisi salad with red beans and beef are extremely useful components and a minimum of fat. It can be prepared not only at home. Having prepared the products in advance, we take them for a picnic and mix there. Let's analyze the cooking process step by step.

What is needed:

  • 200 g of meat;
  • canned red beans from a can;
  • one sweet onion;
  • one bell pepper;
  • 50 g of walnuts;
  • two garlic cloves;
  • a teaspoon of sunli hop;
  • cilantro;
  • five tablespoons of olive oil;
  • a tablespoon of wine vinegar;
  • hot ground peppers of different types.

Procedure

  1. We chop the onion with thin halves of the rings. If it is islet, then we first hold it for two minutes in hot water.
  2. Cut peppers into thin sticks.
  3. Cook the beef in slightly salted water. Finished, cooled meat is cut into cubes.
  4. Grind the garlic - chop or crush.
  5. We drain the liquid from the beans, wash the beans in cold water.
  6. Finely chop the nuts, chop the greens.
  7. Mix olive oil with wine vinegar.

We choose any kind of meat - chicken, turkey, lamb, pork. We cook both hot and softer options. Instead of beans, we use corn. For piquancy, add olives or olives. We use pomegranate juice, apple cider vinegar or mayonnaise as a dressing.

With Chiken

Features. The option is easy due to diet and low-calorie chicken meat. There are also fewer hot spices and no chili pepper added. The recipe for “Tbilisi” salad with chicken can be modified. For example, meat can be boiled or fried.

What is needed:

  • 600 g chicken fillet;
  • two cans of red beans;
  • three garlic cloves;
  • two red onions;
  • four yellow and red bell peppers;
  • 100 g of walnuts;
  • two tablespoons of lemon juice;
  • 30 ml of wine vinegar;
  • 100 ml of sunflower oil;
  • a teaspoon of sunli hop;
  • cilantro.

Procedure

  1. Fry the meat cubes until golden brown.
  2. We chop the cilantro, individually chop the garlic and nuts.
  3. Cut the pepper into strips, onion into half rings.
  4. We wash the beans and wait until the excess liquid drains from it. We can recline in a colander or sieve.
  5. Mix vinegar with oil. Fill dressing with salad dressing, add seasonings, spices and mix.

With pork and parsley

What is needed:

  • 200 g of boiled meat;
  • 150 g of beans from a can;
  • two sweet onions;
  • one bell pepper;
  • garlic clove;
  • five to six cherry tomatoes;
  • a small bunch of parsley;
  • ground peppers, salt;
  • 15 ml of balsamic vinegar;
  • 15 ml of sunflower oil.

Procedure

  1. We cut the meat into strips, pepper - into strips, tomatoes - into slices, one onion - into half rings.
  2. Grind garlic and herbs.
  3. Drain the liquid from the beans, rinse.
  4. Marinade for Tbilisi salad: take salt and sugar in a ratio of 1: 2, 50 ml of water, one tablespoon of vinegar and vegetable oil. Add ground pepper.
  5. We divide the marinade into two halves, one for meat, the second for the remaining onion, which we cut into rings. Fill it and wait 10-15 minutes.
  6. We extract onions and meat, mix them with other products. Do not refuel.
Instead of canned, we can use fresh beans. But first we boil it. To save time, pre-soak it for a day or at night. Cook for about one hour until cooked. If there is no red bean, then we can take white. Instead of meat, you can use the liver. We only boil it, but do not pickle it. It will provide the dish a more delicate taste.

With heart and corn

Features. Beef heart (96 kcal) is almost half as high in calories as meat (187 kcal) and is often included in dietary tables and medical diets.

What is needed:

  • 350-400 g of beef heart;
  • a can of canned corn;
  • one sweet onion;
  • one bell pepper of any color;
  • half hot pepper;
  • 20 g of any greens;
  • hops-suneli, ground peppers, salt;
  • 60 ml of sunflower oil;
  • 15 ml of lemon juice.

Procedure

  1. Boil the heart. Together with pepper, cut it into small sticks.
  2. Finely chopped peeled hot pepper and add to the heart.
  3. Cut the onions into rings and fill them with juice from half of the citrus. We insist no more than five minutes.
  4. Drain the liquid from the corn.
  5. We mix the ingredients, season with oil, spices and seasonings, herbs.
Optional use of heart. The language will do. If it seems that the appetizer turned out to be very spicy, then before serving, put it in the cold. In a few hours, a small portion of the sharpness will go away. If there are children at the table, then it is better not to use chili peppers.

Features. This option is quick enough to cook, since you do not need to boil the meat first. We use not only ham. Add any sausage variety you like instead.

What is needed:

  • 300 g ham;
  • red beans from a jar;
  • one sweet onion;
  • 50 g of walnuts;

  • garlic, herbs, spices and seasonings to taste;
  • 45 ml of sunflower oil;
  • 15 ml of lemon juice.

Procedure

  1. Pepper, chop the meat in small squares.
  2. Cut the onion into halves of the rings.
  3. Drain the marinade from the beans.
  4. We mix the ingredients, season with spices and seasonings, herbs.

Before serving, we can hold the dish in the refrigerator so that it is well saturated. Having decided to make Tbilisi salad, we use a little trick. The meat-free Tbilisi salad recipe is an excellent solution for those who don’t eat animal products, or who are on a diet or lean diet.   • one can of canned corn;
  • one bell pepper;
  • one sweet onion;
  • two garlic cloves;
  • two tomatoes;
  • a bunch of parsley;
  • 75 ml of sunflower oil;
  • 45 ml of vinegar (apple or wine);
  • 45 ml liquid mustard;
  • 30 ml of honey;
  • salt, pepper, sunnel hops.

Procedure

  1. We cook green beans in salted water.
  2. Drain the marinade from the corn.
  3. Pepper, tomato, onion shred squares.
  4. Grind the greens.
  5. Separately prepare the sauce. Mix the oil with vinegar, honey and mustard, chopped garlic. Mix well.
  6. We mix everything, pour salad dressing over the sauce, add spices and seasonings.
If green beans are fresh, then we cook it for four to five minutes, and keep frozen in boiling water for two to three minutes. Be sure to drain the water. You can speed up the process by folding the product in a colander. Beans are added to the snack already cooled.

  • one can of canned tuna;
  • one can of red beans;
  • one red onion;
  • one bell pepper;
  • 50 g of walnuts;
  • one small hot chili pepper;

  • 15 ml of lemon juice.

If we buy prefabricated seasonings in the store, then do not forget that they already have salt. We read the composition of the product and take this into account when refueling snacks. To make the dish not too sharp, choose the onion correctly. It can be not only red, but also a white onion. When buying, pay attention to its shape and size. A large, elongated vegetable is considered the sweetest.

Features. Georgian salad "Tbilisi" without meat ingredient - a dish that we cook in fasting or for diet. A spicy appetizer is suitable not only for breakfast and lunch, but also for light dinners.

  • 150 g of red beans;
  • one jar of pitted olives;
  • two red onions;
  • three garlic cloves;
  • cilantro, lettuce leaves;
  • spices and seasonings;
  • 45 ml of sunflower oil.

Procedure

  1. Boil the beans, cool them.
  2. We cut olives into rings, onions into half rings.
  3. Grind herbs, garlic.
  4. Hands tear lettuce leaves into small pieces.
  5. Mix the ingredients, season with oil and add spices.
