Today we’ll talk about how to prepare a liver salad with carrots and onions, the recipe of which is simple to implement, will not take you much time and will pleasantly surprise your guests!

Before we start cooking dishes from the liver, let's talk about its wonderful beneficial properties.

From beef liver

As you know, you can use the liver of various animals for cooking, and we will begin our acquaintance with liver recipes with beef liver salad with pickles, carrots and onions.

You will need:

  • 500 g of beef liver;
  • 3 large carrots;
  • 2 large onion heads;
  • 3 medium-sized strong pickles;
  • 3 tablespoons of mayonnaise;
  • sunflower oil for frying;
  • salt, black pepper and dill to taste.

Cooking

  1. Clean the liver of the films and rinse well under running water. Then dry the meat with a paper towel and cut into thin slices (approximately 1 cm thick).
  2. Salt and pepper the slices, and then fry each on both sides in sunflower oil. Since mayonnaise is used as a dressing, use very little oil.
  3. Put the prepared slices on a dry paper towel and let the excess oil drain. Then cool the liver, and cut the slices into thin strips.
  4. Korean carrot liver saladPeel the onions and cut them into thin rings.
  5. Cut the carrots into thin strips and fry it with onions over low heat until cooked.
  6. Straws pickles.
  7. Now the ingredients can be mixed - add to the meat slices a mixture of carrots and onions, as well as cucumbers, and mix thoroughly, seasoning the salad with mayonnaise first.
  8. Let the dish brew for 3-4 hours.

Ready salad from the liver with carrots and pickles can be decorated with a sprig of dill, as well as add crackers from white bread.

Chicken Liver Salads

To prepare a festive dish, you can use another version of the main ingredient - chicken liver, which is in no way inferior to the taste of beef.

Asian hepatic

We suggest preparing a more oriental version of this dish - chicken liver salad with Korean carrots. Spicy hot carrots can be bought at the store, but in our recipe we will tell you how to cook it yourself.

You will need:

  • 300 g chicken liver;
  • 4 large carrots;
  • 4 heads of garlic;
  • salt;
  • sugar;
  • sunflower oil;
  • vinegar;
  • 150 g mayonnaise;
  • half a can of canned corn.

Cooking

  1. First cook the carrots. To do this, peel and grate it on a special Korean carrot grater. If there is no grater at hand, you can cut into very thin strips.
  2. Peel the garlic and divide it into slices. Pass each clove through the garlic press. Count the amount of garlic to your taste (4 heads are used in a traditional Korean hot carrot recipe).
  3. Mix garlic with carrots and add salt and sugar to taste. Then add a little pepper, vegetable oil and vinegar. It is recommended to add a very small amount first, and then pour more if desired. Also, instead of plain black pepper, you can add a special set of spices for Korean carrots, which is sold in the store.
  4. Next, rinse and dry the liver, cut it into slices and fry on both sides until tender. Blot excess fat and cut into strips or into small pieces.
  5. Combine the liver with Korean carrots, add canned corn to the same container and season with mayonnaise.

After the dish is infused for several hours in the refrigerator, the chicken liver salad with carrots is ready in Korean!

Hepatic Mushroom

Another exotic recipe involving chicken liver is a liver salad with pineapple, carrots and mushrooms.

Mushroom and liver saladTo prepare it, take:

  • 300 g chicken liver;
  • 100 g of hard cheese;
  • 200 g of champignons (fresh or canned);
  • half a can of canned pineapple;
  • 60 g of walnuts;
  • 2 small carrots;
  • 1 onion;
  • 2-3 cloves of garlic;
  • two and a half tablespoons of ketchup;
  • mayonnaise;
  • salt pepper.

Cooking method:

  1. Rinse, dry and cut the liver into small pieces. Fry them on both sides until cooked.
  2. Cut the mushrooms into thin slices and put them in the oil remaining in the pan, then fry them until light brown.
  3. Combine the mushrooms and pieces of meat in a deep bowl. Add to them finely chopped pineapples, half rings of onion and garlic, crushed in a garlic gum.
  4. Grate the cheese and add it to the previous ingredients.
  5. Crush the walnuts and pour them into the mixture, then mix thoroughly.
  6. Season the dish with mayonnaise and ketchup, salt and pepper to taste.
  7. Before serving, leave the salad in the refrigerator for 2-3 hours.

As you can see, all liver salad recipes with carrots and onions, even with the addition of more exotic ingredients, are simple. They can be prepared in just half an hour. Liver salads will be able to please you and your guests with a delicate taste and give your table a spicy touch!
