Fragrant beef shurpa - an oriental recipe

Ingredients

Beef 700 g
Carrot 1 PC.
Bow 1 PC.
Sweet pepper 3 pcs.
Tomatoes 5 pieces.
Water 2 l
Potatoes 5 pieces.
Salt, hot pepper taste
Garlic 2 cloves
Ground coriander 1 tsp
Parsley, basil green taste

Step cooking

  1. To prepare the broth, we use 700 g of beef ribs. The bones will give a special taste, the broth will turn out to be strong and saturated. For a more rich and thorough shurpa, beef can be replaced with lamb, but not everyone likes the specific taste and aroma of this meat.
    Rinse well and cut into pieces of beef ribs.
  2. Rinse the ribs well, cut into large pieces. The pan should be used with a thick bottom. We put the meat in a pan, pour 2 liters of cold water, close the lid and set it to simmer until the meat is ready, about 60 minutes.
    Put the ribs in a pan. pour water and cook until tender.
  3. During cooking, periodically remove the foam with a slotted spoon so that the broth remains clean and transparent.
    After boiling the broth, it is necessary to remove foam from it.
  4. Next, prepare the vegetables. The main thing is to chop the vegetables coarsely so that in the shurpa they remain whole slices, rather than boiled. We clean one onion and cut into a medium-sized cube.
    Chop the onion.
  5. Peel the carrots and cut into large cubes of arbitrary shape.
    Cut the carrots into fairly large pieces.
  6. When the broth is ready, send the onions and carrots to the pan and continue to simmer for 30 minutes.
    We spread the vegetables in a pan with broth.
  7. In the meantime, prepare the rest of the ingredients. Potatoes, 5 pieces of medium size, peel and chop coarsely.
    We chop peeled potatoes in large pieces.
  8. Peppers will be peeled and cut into large pieces. To make shurpa with smoke, peppers can be baked in the oven or calcined in a pan.
    Cut the bell peppers into pieces.
  9. Tomatoes should be peeled, for this, pour them with boiling water for several minutes, and then easily peel.
    Pour the tomatoes with boiling water, and then remove the skin from them.
  10. Also cut into large pieces of arbitrary shape, as you like. Shurpa soup should be quite thick, but it can be varied to your liking. In the winter season, you can use frozen vegetables, the soup will be just as tasty.
    Cut peeled tomatoes into pieces.
  11. We send all prepared ingredients to Shurpa.
    All chopped vegetables are sent to the broth.
  12. Bring the soup to a boil, add 1 tsp. ground coriander, a pinch of hot pepper. We cover the pan with a lid and cook the soup over low heat for another 30 minutes until all vegetables are ready. Spices and seasonings you can choose and add to your taste.
    Add pepper, spices to taste.
  13. At the very end of cooking, add salt to taste. Add finely chopped garlic and turn off the heat immediately. Let the soup brew for 10 - 15 minutes and serve.
    At the very end of cooking, add garlic to the shurpa.
  14. Pour shurpa with soup ladle into plates, sprinkle with chopped basil and parsley. Enjoy your meal!
