Often, manufacturers use a lot of salt to extend the life of their products, which completely kills the whole natural taste of the product.

If you buy salmon for the holiday, so fresh. Ideally, if the fish is only partially stripped: it is sold with its head and tail. Looking into her eyes, you can immediately determine the degree of freshness of the carcass. If the look is cloudy - the fish is old, if transparent - you can take it. Take a closer look at the gills. In recently caught fish, they are bright red, and in old individuals they are cast in brown.

How to cook slightly salted salmon

The recipe for salted salmon is very simple. You will need:

  • fish weighing about 2 kg;
  • coarse sea salt - 100 g;
  • sugar - 50 g.

Cooking

  1. With a sharp knife, cut the carcass from the side of the abdomen, make several incisions along the spine, being careful not to damage the skin on the back. Remove the spine, clean the abdomen. Rinse the fish with cold water and pat dry.
  2. Combine salt and sugar in one container. It is advisable to use salt of different grinding: medium and large, to achieve uniform salting of fish. Pour the carcass with the mixture from the inside, curl the edges, salt on the side of the skin. If the carcass weighs more than 1.5 kg, make cuts on the skin.
  3. Wrap richly salted fish in a plastic wrap or bag, hide in the refrigerator for 24 hours.

  • salmon fillet - 300 g;
  • tomatoes - 250 g;
  • bell pepper - 1 pc.;
  • Parmesan cheese or similar - 150 g;

  • garlic - 2 cloves;
  • white bread - a quarter of a loaf;
  • boiled egg - 3 pcs.;
  • lemon juice - 2 tbsp. l .;
  • vegetable oil - 100 g.
  • ready mustard - 1 tsp;

Cooking

  1. Soak lettuce leaves for 1 hour in cold water so that they stay crispy longer.
  2. Heat vegetable oil in a pan, add 1 clove of garlic, crushed with a knife.
  3. Remove the garlic, add the diced white bread, fry and cool.
  4. Tear lettuce leaves with your hands, lay on a dish.
  5. Cut tomatoes and peppers, put on a salad.
  6. Cut the salmon into thin slices, lay on vegetables.
  7. Grate cheese and sprinkle them with fish, put croutons on top.
  8. Make a dressing: mix the forked yolks with vegetable oil, lemon juice, mustard and a clove of garlic. Salt and mix well.
  9. Pour salad dressing and serve. It should be mixed just before use.

Mimosa salad with light-salted salmon

  • salmon fillet - 300 g;
  • eggs - 3 pcs.;
  • cheese (Russian) - 150 g;

Cooking

  1. Boil the eggs, separate the yolks from the proteins. Last grate on a fine grater.
