Step cooking
- For the preparation of a classic hodgepodge, different types of meat and sausages are used. First of all, you need to prepare all the ingredients. Salami sausage in an amount of about 150 g is cut into small cubes. Also, in small cubes, you need to cut 1 sausage, which you can take to your taste. Boil the sausage is not required. Similarly, cut into small cubes 150 g of carbonate.
- For soup, about 300 g of gherkins are used. They can be made independently or purchased in a ready-made store. Cut the gherkins in circles or semicircles. For hodgepodge, you can also take ordinary pickled cucumbers.
- Peel 1-2 cloves of garlic from the husk and cut into thin slices. If the clove of garlic is large, then one will be enough.
- After pouring about 2 liters of water into the stewpan, put 1 small chicken fillet and boil it until fully cooked. After cooking, let the meat cool and cut into cubes.
- It is also necessary to boil 150 g of smoked ribs in 2 l of water in advance, so that they become a little softer. To make the ribs boil faster, cut them into pieces.
- For frying, you need 1 small onion. Cut it into cubes. We put a cauldron or a thick-walled pan on a stove or fire. Pour 3-4 tbsp. l vegetable oil and fry the onions, stirring regularly with a spatula.
- When the onion gets a golden hue, add the diced carrots and 2-3 potatoes, also cut into 6-7 mm cubes. We mix all the vegetables well and fry for 5-7 minutes over medium heat.
- Sliced gherkins are sent to a cauldron for slightly fried vegetables. Stir and continue to fry, without reducing the fire.
- Prepared meat and sausages are added to the pot and other ingredients. Mix everything thoroughly.
- Add 2-3 tbsp to the dish. l ketchup and mix. Instead of ketchup, you can use tomato paste in the same amount to make a hodgepodge. After adding ketchup, simmer everything over medium heat for another 5 minutes.
- In the hodgepodge to the rest of the ingredients we send slightly boiled smoked ribs. Pour a hodgepodge of 3-4 liters of meat broth, in which ribs and chicken fillet were cooked. Salt the hodgepodge to taste and wait until it boils. Do not forget to salt the dish to taste, but it is worth considering that in the hodgepodge there are already pickles and smoked meats.
- At the very end, add 70-80 g of olives, cut into rings, into the hodgepodge. If desired, olives can be replaced with a similar amount of olives. Boil the dish for another 2-3 minutes and turn off the heat.Classic hodgepodge is completely ready. Pour it into portioned deep plates and serve to the table with 1-2 slices of lemon and 1 tbsp. l sour cream. Also, the first dish can be decorated with finely chopped fresh herbs.
