Tabasco sauce is the result of culinary research by the owner of the island, Edmund Macalenni, who prepared the now famous seasoning from cayenne pepper, the highest quality white vinegar and salt supplied from island mines.

In 1886, the first can with the label “Sauce made by Mr. McAlenni” was released. It is known that the product was then packaged in containers with a dispenser: cologne was bottled on such bottles. Hot sauce instantly became a success, its creator patented the product, calling it Tabasco, and subsequently founded the company McIlhenny, which to this day is engaged in the production of seasoning, popular all over the world.

Tabaska pepper is a variety of cayenne pepper, which, unlike other representatives of the burning species, is juicy inside, not dry.

Original cooking technology

Invented by Edmund, the recipe for spicy Tabasco sauce remains unchanged for many years; it is easy to make it with your own hands. But repeating it is hard. Most cooks will not be able to get the ingredients from which it is prepared, and the process is very time-consuming.

Ingredients:

Manufacturing process

  1. Pepper seeds are sown in greenhouses in January, and since April young plants are planted in the fields.

  3. The fruits are ground together with the seeds and ground with kosher salt.
  4. The mass for three years is sent to barrels made of white oak.
  5. The mixture is freed from the skin and seeds, combined with vinegar: the mixing process takes another month.

This is the original technology of cooking classic Tabasco, providing its unique taste. McIlhenny, anxious about its reputation, still adheres to this recipe by supplying TABASCO brand sauces to more than 160 countries.

A green rim on the neck, a red cap and a white rhombus sticker are indispensable attributes of the original bottle, recognizable all over the world.

TABASCO seasoning assortment

Over time, McIlhenny, delighting satisfied customers, expanded the range of sauces produced under the brand name TABASCO. So, to the 125th anniversary of the company there was a recipe for green Tabasco sauce - “Jalapeno”. It contains no Tabasco pepper at all: the product is made from the fruits of green jalapeno peppers. In addition to classic and green sauces, the TABASCO line includes five more types:

Tabasco homemade sauce recipe: 3 varieties

No frills

  • apple-yosht vinegar - 80 ml;
  • fresh hot red pepper - 40 fruits;

How to cook

  4. Pour in warm water so that the liquid slightly covers the mass.

  6. Place the sauce in a cool place for nine months.
  7. Grate the mass through a sieve to get rid of seeds and peel.
  8. Pour in the vinegar, close the container with a lid and shake well to mix the ingredients.

What is required:

  • fresh hot chili peppers - 300 g;
  • dry pepper pepperoni - 30 g;
  • coarse salt - three tablespoons;
  • white wine vinegar - 200 ml.

  1. Chop the chili peppers along with the seeds, separate the stalks.
  2. Mix with salt, pepper and pepper vinegar, beat with a blender.
  3. Put the mass in a heat-resistant container, boil.
