Wheat flour 4 tbsp. l

  1. We take 1 kg of fresh pike perch, clean it from scales and viscera, cut off the fins. Rinse well.
    We clean and gut the pike perch carcass.
  2. We cut it into steaks, approximately 2 - 3 cm. In order for the fried fish to turn out with a tender and crispy crust, we must remove excess moisture from the pieces with a paper towel and dry well.
    Cut the ship into portioned steaks.
  3. We shift the steaks into a glass bowl, sprinkle 1 tsp. salt. Mix the pieces with your hands so that the salt is evenly distributed.
    Salt the fish and mix to distribute the salt.
  4. Let stand for 15-30 minutes, during this time the fish is saturated with salt.

Breading

  1. Rub the zest with one lemon on a fine grater.

  4. Turn all the pieces over to the other side. Fry in the same way for 5 - 7 minutes. If the pieces are large and you want the fish to be softer, cover with a lid for a short while so that the meat of the fish is cooked from the inside.
    Turn the fish over and fry on the other side.
  5. We spread the fish on a plate with a paper towel so that excess oil remains on the towel.
