Step cooking

  1. A few hours before cooking, the beans must be washed and left in water (the soaking time of the beans depends on its type). Then you can leave this water and put on fire. It is necessary to bring it to a boil, then drain the water, collect a new one and put it on fire again. This will be our basis for the soup. While the beans are boiling, you need to peel 5-6 potatoes, one large onion and carrots. Cut the potatoes into medium-sized cubes. Chop the onion, and grate the carrots on a coarse grater.

  2. Next, put the pan on the stove, pour 3-4 tbsp. l vegetable oil, and when it warms up, place the onion in the pan first. Fry it until golden brown. Then add carrots to the onion. We mix the ingredients in a pan and fry for another 3-4 minutes over medium heat.

  3. When the beans are almost ready (after 40-45 minutes of cooking), pour the chopped potatoes into the pan.

  4. After the potato soup boils, add spices and salt to taste. Potatoes are boiled for about 15 minutes. Then add the fried onions and carrots.
    We shift the frying into the soup.
  5. Finely chop the fresh herbs (it can be parsley or dill, or both of your choice). We taste the soup, if necessary, add more spices and salt. And 2-3 minutes before turning off, pour the greens there.
    At the end, add chopped greens to the almost finished soup.
  6. You can serve this wonderful soup for lunch by adding a spoonful of sour cream and garnishing with a parsley leaf on top. In addition to excellent taste and nutritive value (this soup is not inferior to meat soup), bean soup contains many vitamins and useful elements necessary for the normal functioning of the body. A little secret: after soaking, white beans should be boiled for 50 minutes. But in the case of red - it will take a little longer (about 60 minutes). And if you decide to cook the beans without pre-soaking, it will take you about 4 hours (red beans) on low heat, or 1.5 to 2 hours (white).
