The easiest and most popular option is how to cook soup with dumplings. For many people, it causes associations with childhood, because the dish is often called the "grandmother" soup. So we’re cooking soup like in kindergarten.

You will need:

  • Traditional dumplings soupwater - 3 l;
  • dumplings - 500 g;
  • potatoes - 300 g;
  • carrots - 1 piece;
  • onions - 1 piece;
  • sunflower oil - 10 ml;
  • salt, spices - to taste.

Cooking:

  1. Finely chop the onion and carrot and sauté in oil.
  2. Boil water, peeled and chopped potatoes put in a pan.
  3. When the potatoes are half ready, add vegetable frying and spices to the pan. Cook for 10-15 minutes.
  4. Add dumplings to the pan and cook until cooked.
The recipe for the “grandmother's” soup with dumplings allows the use of “lazy” dumplings or “meat roses”. To prepare them, roll out the dough on the table, put the minced meat on top and wrap it in a roll. Cut into pieces and dip them into boiling broth.

The rich borsch is good in itself, but if you are already fed up with it in its classic form, diversify it. We offer an easy version of the dish, on the water and with lots of vegetables. You need to cook it in a pan with a thick bottom.

Borsch with dumplingsYou will need:

  • dumplings - 500 g;
  • beets - 3 small;
  • carrots - 2 pieces;
  • onions - 1 head;
  • garlic - 1 clove;
  • lemon juice - 10 ml;
  • sunflower oil - 10 ml;
  • water - 2 l;
  • salt, spices, herbs - to taste.

Cooking:

  1. Peel and chop all the vegetables.
  2. Fry onions and carrots in a pan for 10 minutes.
  3. Add the beets and lemon juice, cover and simmer another 10 minutes.
  4. Add vegetable frying to the pan with water. When the water boils, dip the herbs, garlic, salt and spices into the pan.
  5. Cook the soup for another 10 minutes, then remove from the stove and let it brew.
  6. Boil dumplings in a separate saucepan, and then put them on plates.
  7. Add vegetable soup and serve immediately.
For the first dishes, classic dumplings stuffed with pork and beef are ideal. The meat should be sufficiently fatty - this will provide juiciness. Ideally, if the dumplings get into the pan from the freezer, they better keep their shape. Of course, each family has its own traditions regarding the appearance of dumplings, but round soups are best for soups.

Uzbek soup chuchvara-shurpa

This dish is called chuchvara-shurpa with a pronounced oriental flavor: Uzbek-style soup with dumplings. Tiny pot-bellied dumplings in a fragrant meat broth with vegetables - an explosion of taste! Cooking chuchvar-shurpa will require a lot of effort and time (here you can’t do without hand modeling!), But the result is worth it.

Chuchwara Shurpa SoupYou will need:

  • lamb - 300 g;
  • beef - 300 g;
  • onions - 4 large heads;
  • flour - 500 g;
  • eggs - 2 pieces;
  • water - 100 ml;
  • lamb bones for the broth;
  • tomatoes - 3 pieces;
  • garlic - 1 head;
  • salt, black pepper, herbs - to taste.

Cooking:

  1. Make mincemeat: mince beef and lamb through a meat grinder, mix, add chopped onion, pepper and salt.
  2. Knead strong dough with flour, water and eggs.
  3. Roll the dough thinly. Cut it into squares with a side of 5-6 cm.
  4. Put a lump of ground meat in the center of each square.
  5. Blind the dumplings: fold the square from the dough in half and pinch all the edges to make a rectangle. Then pull the bottom corners of the rectangle towards each other, on the side where the fold of the dough is, connect them. The shape of the dumplings should resemble the eye.
  6. Pour the bones with cold water in a large saucepan. Add onions, garlic and salt and cook for about two hours.
  7. Dip the sliced ​​tomatoes into the broth.
  8. Add the dumplings and cook until cooked.
  9. Serve hot chuchvara shurpa with lots of chopped greens.
Dumplings in chuchvara-shurpe should be small. It is believed that the smaller they are, the more skillful and economical the hostess. Especially worth mentioning about the broth. For this dish, the broth is prepared on bones without meat, usually those from which it was cut for minced meat.

In a vegetable broth with a step by step recipe

  1. In a saucepan with cold water, put the onion, carrots and a slice of celery stalk cut in half.
  2. Bring to a boil, add salt and spices.
  3. Remove vegetables from the water.
  4. Cook the dumplings in the broth and pour it on the plates with it.

There are exactly as many options for making dumplings with broth as there are types of broths. Decoctions of chicken, meat, vegetables, mushrooms lend themselves perfectly to freezing, because any housewife can prepare the basics for soups for the future. And to make dumplings with broth, even a recipe is not needed - just defrost the broth, bring it to a boil and cook the necessary ingredients in it.
