Beef tartar - little cooking secrets

Tabasco sauce 1 tsp
Olive oil 0.5 tsp

Butter 20 g
Garlic 3 cloves

Step cooking

Tartarus

  1. Freeze a piece of lean beef tenderloin tightly wrapped in cling film in the freezer. The meat is pre-washed, dried, films removed.
    You must first freeze beef.
  2. Cut the meat into cubes with a side of 4 mm. Cut across the meat fibers.
    Cut the frozen meat into a very small cube.
  3. Transfer to a deep plate.
    Spread finely chopped meat in a bowl.
  4. Finely chop the cilantro stems (7-8 pcs.), Which will create an additional aroma, add a juicy crispy note to the dish. Pour chopped cilantro to the meat. With cilantro leaves, you later decorate the dish when serving.
    Finely chop the celery stalks.
  5. Cut the capers very finely (1 tsp). Transfer pieces of capers to a plate with a tartare workpiece.
    Grind the capers.
  6. Wash the thin stems of young green onions (3-4 pcs.), Cut the white part of the stems very finely, add to the meat.
    Grind the white part of the fresh onion.
  7. Cut pickles (1 pc.) Into layers along the fruit, and then into small cubes about 3 mm in size. Pour into a bowl.
    Finely chop the pickle.
  8. Add Dijon mustard (0.5 tsp) to the mixture of meat and other ingredients, ketchup without flavoring and other additives (1 tsp without top), high-quality soy sauce with low salt content (0.5 tsp. )
    Add Dijon mustard, ketchup, sauce to the crushed components.
  9. Pour Tabasco sauce (1 tsp) into a bowl.
    For the sake of spice, add the Tabasco sauce.
  10. Salt the mixture (a pinch of salt), add black ground pepper (a pinch). Drizzle olive oil.
    Add a little olive oil, salt, pepper.
  11. Gently mix the tartar mixture.
    Thoroughly mix all the components of the tartar.

Cooking Garlic Croutons

  1. Cut slices of black "Borodino" bread into large cubes, each slice into 16 pieces.
    Dice the Borodino bread into cubes.
  2. Heat the pan well. Put butter (20 g) in a pan.
    We heat the pan with a piece of butter.
  3. Peel the garlic (3 cloves), chop finely.
    Grind the garlic.
  4. Put slices of bread in preheated butter. Fry for 2-3 minutes. Croutons should absorb the oil and fry a little on all sides (mix).
    Fry the bread, preparing croutons.
  5. Put chopped garlic in a pan to croutons, mix.
    Add the garlic.
  6. Remove the pan from the heat.
    After mixing croutons with garlic and immediately remove from heat.

Clearance

  1. Place a square ring on the feed plate.
    For a beautiful presentation we use the culinary ring.
  2. Fill the ring with tartar, gently tighten the composition so that it holds its shape and does not fall apart after removing the ring.
    We put the tartar in the ring, tamp a little.
  3. Put garlic croutons next to the tartar, decorate the dish with green onion feathers and fresh cilantro leaves (those that are torn from the stems).
