Melted butter 6 tbsp. l
Salt 2 tsp
Sugar 1 tsp

Step cooking

  1. We heat 500 ml of water to a temperature of 35-40 degrees, add two teaspoons of salt, one teaspoon of sugar into it, mix everything so that the salt and sugar dissolve.
    Pour salt and sugar into warm water.
  2. In a water bath or in a microwave oven, melt 70 g of butter (we need to get 6 tablespoons of melted butter) and add it to the water. Mix well. Instead of butter, you can use margarine, but we do not recommend this if you really want to get pastry for pasties, like in a cafe. Thanks to butter, pasties after frying become airy, porous.
    Add melted butter to the water as well.
  3. Sift one kilogram of flour into a deep bowl. It is best to sift the flour two or three times, then it will be saturated with oxygen as much as possible. We make a hole in the flour, pour the liquid there, knead the dough. If you have a dough mixer or a bread machine with kneading function at home, we recommend using this technique for these purposes.
    A mixture of liquid components is poured into sifted flour.
  4. Then put the dough on the table and knead with your hands. Add flour if necessary. We need to knead a solid, obedient dough. Then it will not burst during frying. Knead the dough for at least 10 minutes.
    Knead the dough thoroughly.
  5. Then we form a ball out of it, wrap it with cling film and send it to the refrigerator for an hour. After that, we can cook pasties. During the preparation of blanks, roll out the dough with a thickness of 1 mm.

If necessary, the dough can be stored in the refrigerator for a day or three days in the freezer.

For the filling, you can use any minced meat. One of the secrets of delicious pasties (except for the right dough, of course) is properly prepared minced meat. Then the pasties will be very juicy, and the filling is tender. In addition to minced meat, the filling can be cottage cheese or cheese, which melts well.
