How to make lasagna dough at home 🍝

Kitchen appliances and utensils:

  • deep bowl;
  • sieve for flour;
  • silicone kitchen rug or wooden board (work surface);
  • cling film;
  • baking paper;
  • round knife for cutting pizza;
  • kitchen scales;
  • beaker;
  • a sheet of cardboard or plastic;
  • scissors.

Drinking water 20-40 ml

Step cooking

  1. Sift in a deep bowl 400 grams of premium wheat flour. During sifting, the flour is enriched with air, baking is softer.
    Be sure to sift the flour.
  2. Break 4 chicken eggs into a deep plate or large cup. Add 1 teaspoon of salt. Shake the mixture with a fork or culinary whisk.
    Beat the eggs with a pinch of salt.
  3. Make a depression in the slide of sifted flour. Pour the egg chatter into it.
    Pour the eggs into the flour.
  4. Put 3 tablespoons of olive oil. Olive oil can be replaced with any vegetable oil in the same amount, for example, sunflower or corn oil.

  5. The climbing test requires long-term, thorough kneading - for 10-15 minutes. It should turn out dense, but elastic. If the mass is too steep, add 20-40 ml of drinking water.
    Knead the dough thoroughly.
  6. Place the dough ball in a deep bowl, cover with a kitchen towel or tighten with cling film. Leave to proof for 10-15 minutes.
    We leave the finished dough to rest for 15 minutes.
  7. Place the “rested” dough on the work surface. Divide the lump into 8-10 parts.

  8. Roll each serving into a very thin layer. The thickness of the formation should be about 1-1.5 mm. When rolling, sprinkle the work surface with flour (40 grams).
    Roll out each part of the dough thinly.
  9. From cardboard or plastic, cut out a template that matches your baking dish. Place the template on the rolled layer, draw a knife around the outline. It is convenient to use a round pizza knife. Repeat with all portions of the dough. Blind the remaining scraps together, knead and form 2-3 more sheets from them.

  10. Transfer sheets of lasagna to a kitchen towel or cooking paper. Wait until the layer dries a little (3-4 minutes), turn the sheet on the other side.
    The lasagna dough should dry.

Sheets can be dried, stored dry. Before cooking, dry workpieces are kept for 1-2 minutes in boiling salted water. From the dough left after trimming, you can make homemade noodles for soup.
