Kefir can be replaced with sour milk, milk whey or even diluted sour cream - the main thing is to monitor the consistency of the dough. When baking soda is added, it is quenched in an acidic environment - this way we get magnificent magnificent dumplings on kefir. Tasty dough can still be made with yeast.

Steamed Soda Option

From this amount of ingredients, you will get up to 60 wonderful steamed kefir dumplings with soda.

You will need:

  • kefir - 300 ml;
  • egg - 1 piece;
  • baking soda - 1 teaspoon (without slide);
  • salt - a pinch;
  • sugar - 2 tablespoons (if sweet filling is planned);
  • flour - 500 grams (plus a little for mixing and sprinkling the table).

Cooking step by step

  1. Dumplings with potatoes in a plateBeat the egg with a fork or with a whisk, add kefir, add salt, mix (for the version with sugar, add it too).
  2. Sift flour into a bowl, mix in soda.
  3. Make a hole in the flour, pour the liquid component, mix.
  4. Put on the table, dusted with flour, continue kneading, adding flour. The mass, not very dense, should freely adhere to the hands and work surface.
  5. Roll up the ball, place it under a bowl or under a cloth and leave it to swell for 15 to 20 minutes.
  6. Blind the dumplings and cook for 7-8 minutes in a double boiler, in a pressure cooker or by setting a colander in a saucepan.

With vegetables

Homemade fluffy dumplings with potato filling

Dough for dumplings with potatoes on kefir is prepared in the same way as already described. But you can try the option without soda.

Dumplings with cracklings in a deep plateYou will need:

  • flour - 4 glasses;
  • kefir - 230 milliliters;
  • egg - 2 pieces;
  • salt - 10 grams.

Cooking

  1. Mix flour and salt in a large bowl, pour the mixture with kefir, beat the eggs.
  2. Stir with a wooden spatula in one direction.
  3. Keep kneading with your hands when the liquid part is already distributed in the mass, and finish when you get a firm consistency.
  4. Leave the bowl under the bowl for half an hour.
  5. Divide the dough into 4-5 parts, roll them into sausages one at a time and cut the sausages into small cubes.

Dumplings with sour creamYou will need:

  • potatoes - 6 pieces;
  • onion - 2 pieces;
  • creamy margarine - 50 grams;
  • salt, black pepper - to taste.

  1. Boil potatoes in salt water and at the end of cooking, drain it completely.
  2. Mash while the potatoes are still hot.
  3. Finely chop the onion and fry on the margarine.
  4. Put the onions in the potatoes, add salt and pepper and stir.

With cabbage filling

Dumplings with cabbage on kefir are unusual and pleasant to taste, with a very juicy filling.

Dumplings with cabbage and herbsYou will need:

  • white cabbage - 1 medium;
  • onion - 3 pieces;
  • tomato paste - 1 tablespoon;
  • vegetable oil - to taste;
  • salt, spices - to taste.

Cooking

  1. Finely chop the cabbage (you can use a blender).
  2. Finely chop and fry the onion in vegetable oil.
  3. Add the tomato paste, mix, put the cabbage and simmer until golden brown.
  4. Salt, add spices.
  5. Blind the dumplings and cook them for 10 minutes.

Egg-free option

The dough for kefir dumplings can be cooked without eggs: it will turn out no less tasty.

Kefir dumpling doughYou will need:

  • flour - 3 cups (to the brim);
  • kefir - 1 cup;
  • salt - ½ teaspoon (no slide);
  • soda - 1 teaspoon (without a slide).

Cooking

  1. In a bowl, combine salt, soda, flour.
  2. Pour in a weak stream of kefir, at the same time stirring with a spoon.
  3. Knead with your hands until you get a soft, plastic and elastic mass that does not stick to your hands.
  4. Put the dough in a bag and let stand from half an hour to an hour.

Kefir dumplings without eggs (or with them) can be formed with any filling, for example, with cottage cheese.

Dumplings with cottage cheese from dough on kefirYou will need:

  • cottage cheese - 500 grams;
  • egg yolk - 1 piece;
  • salt and sugar to taste.

Cooking

  1. Rub the cottage cheese thoroughly to a uniform consistency.
  2. Mix the cottage cheese with the yolk.
  3. Pour in salt, sugar and mix well.

Kefir dumplings with cottage cheese, as with any other filling, can be cooked in two ways.

  1. Having lowered the products into boiling water, immediately gently mix them with a slotted spoon and, as soon as they emerge, reduce the heat and cook for 30-60 seconds.
  2. Put a colander on the pan or pull the cheesecloth, tying it by the handles of the dishes. Put the products on gauze and boil for 3 minutes on both sides, carefully turning over.
If you cook steamed dumplings on kefir, the recipe for the test is recommended ordinary, with soda - it does not matter with or without an egg. During cooking, place a high “dome” over the pan (for example, a deep bowl) - then the products will not fall.

Secrets of Mastery

So what is the best way to cook the dough for dumplings on kefir, steamed? Or in a more familiar way, in water? And how to cut it so that it does not lose its properties?

It turns out that the "splendor" can be greatly affected by how you cut the dough. For example, here are two different ways.

  1. Dumplings with cherries and sour creamRoll out the dough with plaits (up to 5 cm in diameter), cut them across into small sticks and flatten the small sticks into flat cakes directly with your fingers (without rolling). So your masterpieces will turn out to be more impressive in size, they are better suited for cooking in the "steam" way.
