  • honey - 40 g
  • butter - 50 g
  • cream cheese - 300 g
  • confectionery white chocolate - 200 g
  • fat cream - 200 g
  • raspberry puree - 100 g
  • corn starch - 1 tsp.
  • soda - 0.5 tsp.
  • salt - a pinch

  1. In a deep saucepan, mix 80 g of sugar, 1 egg, 40 g of honey and a pinch of salt. Mix everything with a whisk until smooth. In a stewpan, mix sugar, egg, honey and salt.

  2. We heat 200 g of fat cream and fill them with chocolate. Pour chocolate with hot cream.
  3. Mix everything and punch with a submersible blender to an emulsion state. We interrupt the chocolate with cream with a blender.
  4. We cover the ganache with cling film and put it in the refrigerator for 8 hours. cover the blank with cling film and set the refrigerator.
  5. Lightly beat with a mixer 300 g of cream cheese. Beat cream cheese with a mixer.
  6. Pour cold ganache into the cottage cheese and continue to whip the ingredients with the mixer at low speed. Add white ganache to the cheese and whisk everything.

Cooking Berry Jam

  1. In a deep saucepan, mix 1 tbsp. l sugar, 1 tsp. starch and 100 g raspberry puree. Mix everything until smooth. Put starch, raspberry puree in the stewpan.
  2. With constant stirring, bring the mashed potatoes to a boil and keep it on fire for another 1 minute. Let the jam cool completely. Boil the berry mass until thickened.
