You will need:

  • 1 kg of meat;
  • 500 g of fat;
  • one or two bay leaves for each half-liter jar;
  • five peas of allspice for each half-liter jar;
  • ground black pepper and salt of your choice.

Cooking

  1. Put pepper and bay leaf in jars.
  2. Cut the meat into medium sized pieces, salt and pepper as you like.
  3. Put the product in a jar, but not very tightly. Do not fill the jar, leave 2-3 cm of free space.
  4. Place the jars in a baking sheet or baking dish and pour a little water.
  5. Put the workpiece in the oven and heat it to 250 ° C.
  6. When the workpiece begins to boil, reduce the temperature to 150 ° C and simmer for three hours.
  7. Finely chop the fat and melt in a pan.
  8. Pour the prepared stew with melted fat, roll up and check for leaks by turning the workpiece upside down.
  9. Return the cans to their normal position and allow to cool at room temperature.
  10. Store in a cool place.

In a slow cooker

Features. It is extremely simple to cook a semi-finished meat product in a slow cooker. It is enough to load the necessary products into the bowl and press a couple of buttons. The device will do the rest for you. Stew prepared in this way can be stored in the refrigerator for a week.

You will need:

  • 1.5 kg of meat;
  • three leaves of laurel;
  • spices at your discretion (preferably a mixture of peppers or hops-suneli);

Cooking

  1. Wash, dry and chop the meat into medium sized pieces.
  2. Load the meat into the bowl of the multicooker and cook for two hours in the "Stewing" mode.

  • 600 g of pork;
  • five cloves of garlic;
  • five bay leaves;
  • 500 g of buckwheat;
  • 0.5 l of water;
  • five teaspoons of lard;
  • salt (half a teaspoon in each jar);
  • spices at your discretion.

Cooking

  1. Slice the meat and fill it in each jar by a third.
  2. Add salt and a teaspoon of lard to each jar.
  3. Pour water into containers so that it almost completely covers the meat.
  4. Place the cans on a baking sheet and pour some water into it.
  5. Cover the cans with lids and put in the oven.
  6. Cook the stew until boiling at 200 ° C. It takes about 40 minutes.
  7. Reduce temperature to 150 ° C and cook for three hours.
  8. Remove the workpiece from the oven. In each jar, put a leaf of laurel and a clove of garlic (it is better to cut in half).
  9. Pour 100 g of raw buckwheat into each jar and pour half a glass of water into it.
  10. Reinstall the containers on the baking sheet, cover and place in the oven.
  11. Cook at 200 ° C until boiling, and then another 50 minutes at 150 ° C.
  12. After turning off the oven, let the banks stand for another half hour, then roll them up.
A stew with rice is cooked in a similar way. For each half-liter jar, 75 g of cereal and 150 ml of water are needed. And if you add onions and carrots to the rice blank, you get something like pilaf.

With barley

Features. Perlovka is one of the most useful cereals. It has a lot of protein and B vitamins. It is hearty and goes well with fatty pork. If you can preserve meat with pearl barley porridge, you get a real army dish or something like a "tourist's breakfast."

You will need:

  • 120 g of meat;
  • 70 g of pearl barley;
  • 50 g of lard
  • bulb;
  • four peas of allspice;
  • five peas of black pepper;
  • laurel leaf;

Cooking

  1. Slice the meat and season with salt and ground pepper.
  2. Chop the onion finely and add it to the meat.

  8. Open the lid and add the lard to the jar. At this stage, you can add salt to the stew, if necessary.
  9. Continue sterilization for another three hours.
  10. It remains to roll up the jar.
A nourishing stew with beans is prepared in a similar way. If you suffer from heart and blood vessel problems, choose red beans. For strengthening bones and muscles, give preference to white beans.

Canned beef

Beef has a lot of protein, iron, and collagen. This set of substances is vital for people engaged in intense physical or mental labor. To make beef stew at home quality, take the choice of meat responsibly. Pay attention to the following points.

  • Colour. Only bright red meat without greenish patches and dark spots can be considered quality. If the flesh is brown, then the animal was old.

Autoclave: professional sterilization

An autoclave is a device for sterilization at high temperature and high pressure. It is a large metal flask with a hermetically sealed lid. It has a fitting for pumping air, a pressure gauge for monitoring pressure, a thermometer, and also an emergency steam release valve. Such devices are used to sterilize medical instruments. And from about the 60s, the autoclave found its application in home canning.

Usage Algorithm

A stew in an autoclave at home turns out just like a store. Therefore, if you plan to cook canned meat and fish in large volumes, it is worth considering the purchase of this appliance.The stepwise sterilization process in a gas autoclave can be described in seven steps.

  1. Training. Fill the jars with blanks, roll them up and place in an autoclave. Pour water so that it completely covers the cans.
  2. Pumping. Close the appliance cover tightly and inflate to a pressure of 1-1.5 bar. If you have an autoclave without pressure, this step is omitted.
  3. Heating to sterilization temperature. After half an hour, turn on the hotplate and heat the water in the autoclave to the sterilization temperature appropriate for the type of stew. In this case, the pressure should rise to 4-5 bar.
  4. Excerpt. Reduce heat and sterilize at constant temperature. Control the pressure.
  5. Cooling down. Switch off the burner and wait until the temperature drops to 60 ° C.
  6. Pressure reduction. Slowly bring the pressure reading to zero. This manipulation is not applied to the device without pumping.
  7. Completion. Remove the cans from the appliance, wipe. After solidification, store the stew.
An electric autoclave is suitable for home use. It is much more convenient to use. It is important that the device itself maintains optimal temperature and pressure readings.

Sterilization modes
