Fragrant stewed rabbit with onions, carrots and olives

Ingredients

Rabbit meat 1 kg
Onion 1 PC.
Garlic 2 cloves
Carrot 1 PC.
A tomato 1 PC.
Wheat flour 5 tbsp. l
White wine 100 ml
Tomato sauce 2 tbsp. l
Thyme 2-3 branches
Olives 5 pieces.
Olive oil 2 tbsp. l
Pine nuts 20 g
Parsley 10 g
Salt taste
Ground black pepper taste

Step cooking

Product Preparation

  1. We wash the rabbit carcass under running water and dry it with paper towels, cut it into arbitrary portioned pieces.
    We cut the rabbit in portions.
  2. Take 1 onion, 2 cloves of garlic and 1 carrot, rinse them thoroughly and remove all excess parts. Cut the onions and carrots into small cubes, and crush the garlic with a knife so that it gives more aromatic oils.
    Dice the carrots and onions.
  3. We also wash the middle tomato, and then remove the peel, leaving only a soft core.
    From the tomato we take only the pulp and cut it into a cube.

Cooking process

  1. In a heat-resistant pan, heat 2 tbsp. l olive oil (can be replaced with vegetable oil) and put into it pieces of rabbit meat, thoroughly boned in flour.
    We spread the pieces of the rabbit in the cauldron, which must first be rolled in flour.
  2. Fry the meat until golden brown for 7-10 minutes, periodically turning and stirring. Then take them out on a separate plate.
    Fry the meat until golden brown and remove from the pan.
  3. We send chopped vegetables to the same pot: onions, garlic and carrots. Add salt, pepper to taste and add a drop of olive oil. Fry a couple of minutes until the onions are soft.
    Instead of a rabbit, we put vegetables in a cauldron and fry.
  4. Add meat to vegetables and mix the ingredients.
    Add meat to vegetables.
  5. Pour 100 ml of white wine, and also introduce tomato sauce and tomato pulp. Mix everything thoroughly again.
    Add chopped tomatoes, tomato paste, as well as white wine.
  6. After a couple of minutes of stewing, add 2-3 branches of thyme and 5-6 olives to the pan for a more piquant taste and aroma.
    Add a sprig of rosemary and olives.
  7. Pour all the ingredients with water so that it covers them 1-2 cm.
    Fill the dish with water and leave to stew.
  8. Stew for 15-20 minutes until tender.
    The rabbit will be stewed for another 20 minutes.
  9. We serve the rabbit with vegetables as a separate dish, water it abundantly with the resulting sauce, decorate with olives, pine nuts and parsley.
