We offer you a simple step-by-step recipe for making cottage cheese cookies in the form of envelopes with two filling options - boiled condensed milk and canned cherries. Thanks to the elastic curd dough and mouth-watering filling, the cookies turn out to be very soft, tender and moderately sweet. The cooking process is not complicated and does not take much time. Premium flour 400 g
Cottage cheese 10-15% 200 g
Butter 72% 200 g
Granulated sugar 50 g
Baking powder for the dough 1 tsp
Salt 1 pinch
Boiled condensed milk 150 g
Canned tinned cherry 140 g
Milk 2.5-3% by expense

Did you know?If you decide to cook boiled condensed milk on your own, follow a few simple rules. Put gauze or a rag on the bottom of the deep pan - this will prevent the jar from rattling on the bottom of the pan while boiling. Pour cold water into the pan with a jar to the maximum possible - this will reduce the amount of topping up the water in the pan. Every 20-30 minutes, check the water level in the pan, the jar should be covered with water. Note the time, the density and color of the product will depend on it: 1.5 hours - light and not too thick, 2-3 hours - more thick and dark, 3-4 hours - very thick and dark.

Cooking dough

  1. In advance, you need to get the butter (200 g) from the refrigerator to soften at room temperature. Put cottage cheese in a container for kneading dough, carefully knead with a fork. If you have coarse-grained cottage cheese, pass it through a meat grinder or grind through a sieve to a pasty state.

  2. We cut 200 g of softened butter into cubes and add it to the cottage cheese, add 50 g of sugar and 1 pinch of salt there. Grind the mixture with a fork.

  3. In several steps, add to the curd mass 400 g of flour and 1 tsp. baking powder, sifting them through a sieve and kneading a tablespoon.

  4. After thickening the mass, continue to knead the dough with your hands until smooth on a cutting board or other flat surface. If the dough breaks up and does not form into a lump, you can add 1 tsp. water. The dough should be elastic and not stick to your hands.

  5. We divide the dough into two halves and give them the shape of cakes, wrap each part in a plastic wrap or bag, and send it to the refrigerator for 30 minutes.

Cooking Cookies

  1. If you have cherries in your own juice, put it in a sieve and let the juice drain.

  2. Turn on the preheat oven to 180 degrees. We cover the baking sheet with a sheet of parchment. Lightly sprinkle the flat surface with flour, put one of the dough on it. We roll it out with a rolling pin into a square sheet about 32x32 cm in size. Using a knife, we first make 4 vertical strips 8 cm wide on the dough sheet, then 4 horizontal strips of the same width. The result is 16 squares of dough for future cookies.

  3. Using 2 teaspoons, spread the boiled condensed milk in the center of each square (150 g of boiled condensed milk evenly in all 16 squares), slightly level.

  4. Brush the edges of two adjacent sides of each square with milk using a culinary brush.

  5. We put the pieces of dough in the form of envelopes, connecting the corners with milk with the opposite “dry” corners of the squares. We pinch the joints of the test with a fork.
