Ingredients

Name amount
Cottage cheese, not less than 5% fat 280 g
Wheat flour 250 g
Chicken egg 3 pcs.
Vegetable oil 2 tbsp. l
Milk 1 tbsp. l
Granulated sugar 2-3 tbsp. l
Vanilla sugar 10 g
Baking powder 1 tsp
Salt ¼ tsp
Raisins (optional) 1 handful

Step cooking

Important! Curd for dough should be pasty consistency. To do this, even ordinary homemade cottage cheese (the most grainy of all varieties of cottage cheese) is enough to grind with a blender, pass through a sieve, and pour in some milk or put a spoonful of sour cream. Before you start kneading the dough, you need to turn on the oven, and set the temperature to 190-200 ° C to evenly warm the oven.

Knead the curd dough

  1. Put 280 g of paste-like cottage cheese in a bowl and beat in two chicken eggs.
Eggs are beaten into the curd.
  2. Pour a bag of vanilla sugar (10 g) into the cottage cheese with egg, 2-3 tbsp. l granulated sugar, a pinch of salt (¼ tsp) and mix thoroughly with a whisk until smooth.
Add sugar, salt, vanilla sugar and mix the mass.
  3. In the finished mass pour 2 tbsp. l refined vegetable oil. At this point, you can pour a handful of washed and dried raisins. But this is at the discretion of the one who will bake the curd buns.
Next, add vegetable oil to the dough.
  4. Pour 250 g of sifted wheat flour in a portion with a curd mass in portions, mix thoroughly after adding each portion, but leave 1.5 tbsp. l flour for adding.
In portions we put flour into the dough.
  5. After making the first portion of flour in the dough, pour 1 tsp. (with a slide) of baking powder.
Instead of yeast, add baking powder to the curd dough.

Bake buns

  1. When almost all the flour is interfered, the dough will turn out to be soft and somewhat sticky, but this is easy to fix. Add the left flour (1.5 tbsp. L.) To the working surface, put the dough out of the bowl and, baking (but not kneading!) In the flour, form a thick layer.
We form a thick layer from the dough with our hands.
  2. Divide the reservoir into eight visually equal parts.
We divide the resulting dough layer into 8 parts.
  3. To form a ball from each part (similar to the method of making cheese cakes), adding as little flour as possible.
We roll each piece of dough into a ball.
  4. Line a baking sheet with baking paper or oiled parchment and lay out the formed buns on paper. In the yolk from one egg pour 1 tbsp. l milk, stir, and brush the surface of the rolls with this mixture.
We spread the buns on a baking sheet and grease with a mixture of eggs and milk.
  5. Bake at the originally set temperature for 20-25 minutes.
In the oven, the curd buns rose perfectly.
Did you know? Before baking, buns can be decorated with sesame seeds, a pinch of granulated sugar, chopped nuts, sprinkling a greased surface on top. The readiness of the test is checked with a skewer or match. You just need to pierce the bun with a wooden arrow, and if the surface of the removed skewer remains dry, the buns are ready. Before serving tea, baking can be sprinkled with plenty of icing sugar.
