Butter 200 g
Condensed milk 90 + 70 g

Step cooking

  1. Curd cream is prepared quite simply and quickly, while it is suitable not only for eclairs, but also for other baking. We start the cooking process by softening 200 g of butter. It is recommended to put the oil out of the refrigerator in advance and let it melt a little at room temperature. If there is no time, then put the oil in the microwave and set for a few seconds, while it is not necessary to melt it to a liquid state. We shift the butter into a deep bowl and stir a little with a mixer.
    Beat the butter softened at room temperature with a mixer.
  2. We add 90 g of condensed milk to whipped butter and mix everything again with a mixer or with the help of a food processor.
    Add condensed milk to the butter and whisk again.
  3. We transfer 400 g of cottage cheese to a sieve and grind a little. Doing this is required so that the curd mass is lush, and lumps of cottage cheese do not come across in the cream. For the preparation of curd cream, you can use a dairy product of any fat content.
    Rub the cottage cheese through a sieve.
  4. To the grated cottage cheese add 1.5 tsp. vanilla and 70 g of condensed milk. We mix everything with a mixer at maximum speed for 2-3 minutes.
    Add vanilla sugar, condensed milk to the curd and also beat with a mixer.
  5. Add the whipped butter to the curd mass and mix everything again. The cream should be of a uniform consistency and without large lumps. 5 minutes are enough to mix all the ingredients.
    In the curd mass we transfer the mixture of oil with condensed milk and again interrupt everything with a mixer.
  6. We put the finished cream in a deep bowl and use it as a filling for eclairs. Curd cream turns out to be airy and with a light creamy taste, while it keeps its shape well. It is possible to diversify the taste of cottage cheese cream by adding lemon zest, strawberries, raspberries or small pieces of peach to it. In this case, the taste of eclairs will be curd-fruity and lighter. You can use the cream not only for eclairs, but also it will serve as a good filling for profiteroles, cakes and pastries.
