Types of Cheeses

Adyghe cheese or tofu is usually used in the preparation of a specific egg-free omelet. It is these products that make it look like an omelet. But you can make this dish with batter. The composition of the cheese is similar to the composition of milk. There are many varieties of cheese, but most often use these two.

Adyghe

Adyghe cheese is a soft cheese made from a mixture of cow and sheep milk. It contains many mineral salts that are easily absorbed, vitamins, amino acids, fats and enzymes.

Adyghe cheese calms the nervous system, improves the intestinal microflora, normalizes mood and sleep, strengthens bones and teeth. This product is useful as a prophylactic for oncology.

It is easily digested. Therefore, if there is no intolerance to dairy products, everyone can use it. But one should observe the measure - a large amount of Adyghe cheese can cause a migraine attack, since it contains tryptophan.

Tofu

Tofu cheese - bean curd. It is dense and softer. It has a high protein content, so vegetarians, calcium, iron, various amino acids are very much appreciated by it. At the same time, there are very few calories, so it is useful for losing weight.

This cheese is also useful for arthritis, anemia, and cardiovascular diseases. It is a prophylactic against osteoporosis, cancer and asthma. Tofu cheese has a high concentration of selenium and iron, so it gives energy.

But this product should not be abused, since a large amount can adversely affect the thyroid gland.

How to cook an omelet without eggs? The main ingredient of this dish is cheese.

With tomatoes and seasonings

Omelet with Adyghe cheese is very easy to cook. Turmeric adds the necessary yellow color, and coriander and hot pepper add piquancy.

Egg-free omelet with cheese and tomatoesYou will need:

  • Adyghe cheese - 200 g;
  • sour cream - 50 ml;
  • milk - 1 tablespoon;
  • turmeric - a quarter of a teaspoon;
  • coriander - a quarter of a teaspoon;
  • tomato - 2 pieces;
  • garlic - 1 clove;
  • red hot pepper.

Cooking

  1. Grind cheese, preferably with a blender.
  2. Dice tomatoes.
  3. Pass the garlic through the press.
  4. Combine sour cream, milk and garlic.
  5. Put spices on a hot pan and hold for 5 seconds.
  6. Add the tomatoes and sauté.
  7. Add cheese to the tomatoes and pour the milk-sour cream mixture.
  8. Cook for 5 minutes.
It is very good to add black salt to the dish. It has a specific egg smell. Therefore, an omelet without eggs will be very similar to the real one.

With zucchini and potatoes

If you don’t like Adyghe cheese, try tofu omelet.

Egg-less omelet with zucchiniYou will need:

  • tofu cheese - 350 g;
  • potatoes - 150 g;
  • zucchini - 150 g;
  • salt pepper.

Cooking

  1. Mash tofu with a fork.
  2. Grate vegetables on a coarse grater.
  3. Mix everything, pepper and salt the mixture.
  4. Put in a pan and fry, crushing a little with a spatula.
  5. Cook the dish for 10-15 minutes.

Potatoes and zucchini can be grated on a fine grater, the omelet will be more tender.

Flour and cereal recipes

How else can I cook a vegetarian omelet? Use batter, which can be based on flour, cereal and seasonings.

With curry

This dish is prepared without the addition of cheese. Instead of eggs, batter is used. Spicy omelet with vegetables gives curry. If you like, you can add hot red pepper - a pinch.

Vegetarian seasoning omeletteYou will need:

  • tomato - 1 piece;
  • water - 150 ml;
  • zucchini - 1 piece;
  • flour - 4 tablespoons;
  • curry - 2.5 g;
  • onion - 1 piece;
  • turmeric - 2.5 g;
  • salt, pepper, herbs.

Cooking

  1. Fry turmeric and curry in just a few seconds.
  2. Finely chop the onion and fry with the spices.
  3. Cut the zucchini into cubes and put in the onion.
  4. Cut the tomato into slices and add to the zucchini.
  5. Simmer all 15 minutes.
  6. Mix water with flour, add curry and turmeric.
  7. Pour the vegetables with batter, salt and stew for another 5 minutes.
  8. Finely chop the greens and sprinkle the dish.

If you do not like the option with the dough, you can cook the same omelet with Adyghe cheese.

With champignons and vegetables

This omelet is not only with vegetables, but also with mushrooms. Their combination is excellent. For this dish you will need cereals - semolina and corn (finely ground).

Egg-free omelet with mushroomsYou will need:

  • champignons - 4 pieces;
  • tomato - 1 piece;
  • cauliflower - 5 inflorescences;
  • carrots - 1 piece;
  • onion - 1 piece;
  • water - 100 ml;
  • corn grits - 3 tablespoons;
  • semolina - 2 tablespoons;
  • pepper, herbs, salt.

Cooking

  1. Boil mushrooms and inflorescences of cabbage until cooked in salted water.
  2. Dice the onion.
  3. Grate the carrots on a coarse grater.
  4. Fry onions and carrots.
  5. Grind onions with carrots and cabbage in a blender. Add the cereal, salt and mix.
  6. Leave the mixture for 10 minutes to let the vegetables pour juice.
  7. Add hot water to the mass. The dough should be a little thinner than for the fritters.
  8. Pour some of the mass into the pan and fry over low heat.
  9. Cut the mushrooms into slices, chop the greens, cut the tomato into slices.
  10. When the omelet is dense, put the mushrooms, tomato and herbs on one half of the omelet.
  11. Cover with the other half and leave for a couple of minutes.

The same omelet can be prepared from zucchini, replacing them with cauliflower.

With broccoli

This dish uses okara - cake, which remains after the preparation of soy milk. It contains a lot of protein, riboflavin, iron and calcium. If you don’t want to use okara, you can make tofu omelet.

Asafoetida is also used as a spice. It replaces onions and garlic, gives the dish a beautiful yellow color. But you can use real vegetables, and for a bright color add more turmeric.

Okara and broccoliYou will need:

  • broccoli - 4 inflorescences;
  • okara - 100 g;
  • corn starch - 0.5 tablespoon;
  • soy milk - 1/3 cup;
  • rice flour - 0.5 tablespoon;
  • black salt, turmeric, asafoetida.

Cooking

  1. Boil broccoli until tender.
  2. Mash okara, add spices.
  3. Pour milk into the mixture, add flour and starch. Stir everything well. The dough should be viscous.
  4. Put the dough in a pan and fry under the lid for 10 minutes.
  5. Put the broccoli inflorescences on one half of the omelet, and close the other and leave for another couple of minutes.

You can add tomato slices and any greens to the filling.

The recipe for a vegetarian omelet can be anything, the main thing is to choose what you like. If you prefer cheeses, prepare a dish with Adyghe cheese or tofu. If you prefer liquid batter - choose this option. Do not forget to add turmeric for a beautiful rich color and various spices for taste.
