Ingredients

  • Prepared water - 530 ml
  • Lemon juice - 1 tbsp. l
  • Sugar - 4.5 tbsp. l
  • Onion - 1 head
  • Garlic - 2 cloves
  • Mustard (grains) - 3 tbsp. l
  • Clove - 1 tsp.
  • Cardamom - 0.5 tsp.
  • Pepper (peas) - 1 tsp.
  • Ground pepper (red) - 0.5 tsp.
  • Ground cinnamon - 0.5 tsp.
  • Ground ginger - 1 tsp.
  • Anchovy or hamsa - 1 pc.
  • Curry - 0.5 tsp
  • Salt - 3 tbsp. l

Step cooking

  1. The first thing to do is prepare onions (1 head). Peel it and rinse it in water. Garlic (2 cloves) also peel, rinse, rinse in water and chop coarsely. peel the onion.
  2. Pour water (400 ml) into the pan, add sugar (2 tbsp.) And mix well to dissolve completely. Dissolve sugar in water.
  3. Put the peeled onion head in the prepared liquid and leave it for 30 minutes. This procedure will get rid of bitterness. Soak the onion in water with sugar.
  4. Pour table vinegar (2 cups) into another small saucepan, add soy sauce (0.5 cups), prepared water (100 ml), lemon juice (1 tablespoon) and mix thoroughly. pour vinegar, soy sauce, lemon juice into the pan.

  9. Form a bag and fix the edges with a regular thread so that the seasoning does not crumble. Tie up gauze with a knot.
  10. Dip the bag into a previously prepared liquid, put on fire and bring to a boil. When the liquid with the bag boils, leave minimal heat and cook the sauce for 30 minutes. Put a bag of spices in a saucepan with sauce.
  11. Peel the anchovy or hamsa (1 pc.), Finely chop and send to a saucepan with sauce. Finely chop the anchovies and add to the sauce.
  12. Also add Curry (0.5 tsp), salt (3 tbsp.) And water (30 ml) to it and mix well. Salt the sauce.
  13. Leave the sauce for a while so that it cools down a little, then pour it with the bag into a glass jar, cover and let it stand for 7 days, squeezing the bag every day and putting it back into the liquid. After a week, the sauce can be used to cook your favorite dishes. This Worcester sauce should be infused for 7 days, then it can be used.
