Ingredients

  • Flour 300 g
  • Butter 73% 125 + 100 g
  • Granulated Sugar 250 g
  • Vanilla Sugar 8 g (sachet)
  • Starch 1 tbsp. l
  • Milk 400 ml
  • Cream 33% 200 g
  • Sour cream 15% 2 tbsp. l
  • Baking powder for the test 1 tsp.
  • Bananas 2 pcs.
  • Apples 3-4 pcs.
  • Cinnamon 1 tsp
  • Powdered sugar (for decoration) 1 tbsp. l
  • Boiled condensed milk (optional 1 tbsp. L.

Step cooking

  1. In a container for brewing a cream, pour 1 tbsp. l starch, 2 tbsp. l flour (50 g), 8 g of vanilla sugar, pour 100-150 ml of milk. In a saucepan or bowl we combine a little milk, sugar, starch.
  2. Mix thoroughly with a whisk until the flour is dissolved and a homogeneous mass is obtained. Mix the components.
  3. Constantly stirring with a whisk mixture, gradually add 200 g of sugar to it. Add sugar to this mass a little.
  4. Pour the remaining milk (250-300 g) into a homogeneous mass, mix thoroughly. Add milk to the mass and mix.
  5. We put it on a slow fire, constantly stirring the mixture with a spatula, cook until thickened, turn off the stove and set the cream aside. Cook the custard base of the cream until thickened.
  6. 100 g (2 tbsp. L.) Of oil are put in a bowl for whipping, whisk with a blender with a whisk. Beat butter separately.
  7. Add the cream to the butter in parts and beat with a blender. We transfer the cream to one of 1-1.5 liters capacity. Beating the butter, in parts we introduce custard into it.
  8. Beat 200 g of cream in an appropriate container. Whip the cream separately.
  9. Add them to the cream, mix it with a spatula until smooth. The cream is ready. Add cream to custard and mix.

Cooking crumbs and dough

  1. We rub 125 g of butter from the refrigerator on a medium grater into a second 1-1.5 liter container. To prepare the crumbs, grate cold oil.
  2. Sift flour (250 g) to the oil through a sieve. Sift flour to butter.
  3. Hand rub the mixture until crumbs are formed. Grind the butter and flour into crumbs.
  4. Set aside 3 tbsp. l crumbs in a bowl or cup. A little crumbs immediately set aside to sprinkle the cake.
  5. In a container with the bulk of the crumbs, add 2 tbsp. l sour cream, mix with a tablespoon or spatula. Add sour cream to the remaining crumbs.
  6. Knead the resulting mass with your hands to a soft dough. Knead light dough.
  7. We spread the dough in a baking dish (it is desirable to grease it with butter). On the sides of the dough we make sides to form a deep plate. On the surface of the dough we make several shallow punctures with a fork. We spread the dough into a form, level it, make the sides and prick it with a fork.

Cooking stuffing

  1. Peel apples and bananas. We take out the core from the apples, cut them into medium slices, then cut them into slices about 0.5 cm thick. Peel the apples and cut into thin slices.

  3. Add to the fruit 1 tsp. cinnamon and 50 g of sugar (2 tbsp. l.), mix with a spoon or spatula. Add cinnamon and sugar to the fruit.

We make a pie

  1. Turn on the oven to warm up to 180 degrees. If desired, add 1 tbsp. To the container with cream lboiled condensed milk, mix thoroughly with a spoon or spatula. In a custard, add a spoonful of boiled condensed milk.
  2. From a frying pan into a mold with dough, evenly stack the fruits. We spread the fruit filling on the basis of the dough.
  3. On top of them, just below the level of the sides of the "plate" of dough, fill the cream and level it with a spatula. On top of the fruit lay a layer of cream.
  4. Sprinkle cream with previously crushed sand crumbs (3 tbsp. L.). Put in the oven for 50 minutes. Sprinkle the cream layer with the crumbs that we left before.
  5. After the lapse of time we take out the pie and let it cool. Enjoy your meal! Such an apple-banana pie turns out to be very tender and tasty.
