Classic Yeast Dough Apple Pie - A Time-tested Recipe

  • baking dish (diameter 28 cm);
  • oven.

Warm milk 150 ml
Dry yeast 6 g
Chicken eggs 2 pcs.
Sugar 3-4 tbsp. l
Salt 2 pinches
Vanilla sugar 10 g
Butter 60 g
Medium sized apples 5-6 pcs.
Cinnamon (powder) taste
Decoy or starch 2 tbsp. l
Vegetable oil for greasing dishes and molds 1 tbsp. l

Step cooking

  1. Sift flour (350 grams) into a bowl or bowl of the processor.
    Sift flour into a bowl for kneading dough.
  2. Add the dry ingredients to the sifted flour: sugar (2 tablespoons), vanilla sugar (10 grams), salt (1 pinch), dry yeast (6 grams), and pour in warm milk, its temperature should not exceed 40 degrees (150 ml ) and beat the chicken egg (1 piece).
    Add salt, sugar, dried yeast, egg and warm milk.
  3. Knead the dough with a spoon or using a processor so that the flour absorbs liquid ingredients, and the dough takes the form of a lump.
    It is very convenient to knead the dough with a food processor.
  4. Add softened butter (60 grams) to the dough and knead the dough so that it becomes elastic and does not stick to your hands. In the process of kneading, you may need to add flour (not more than 20 grams). If you will knead the dough in the processor, then do it at medium speed for 10 minutes, and if with your hands, then look at the properties of the test.
    Add softened butter to the dough and knead well.
  5. Transfer the well-kneaded dough into the dishes, previously greased with vegetable oil, and put in a warm place for 2 hours to lift: the dough should be doubled at least.
    Leave the dough in a warm place to approach.

  6. When the dough rises, take it out on the table and knead a little to let the air out. We begin to form a cake.

  7. Dust the table with flour and immediately roll all the dough into a circle about 1 cm thick.

  8. Put it in the prepared form (greased and dusted with flour) and cut off the excess. From these scraps, the top of the pie will be formed: a net, flowers or other decorations, which your fantasy tells you.
    We put the dough in a pre-oiled form.
  9. Sprinkle semolina or starch along the bottom of the cake (2 tablespoons) and spread evenly over the entire surface with a silicone brush. This is necessary so that the juice released from the apples does not wet the dough.
    To prevent the cake from dripping during baking, sprinkle the base with dough on starch.
  10. Put prepared apples on top (wash 5-6 fruits, peel and cut into small slices) and evenly distribute throughout the whole mold. It is better to peel and cut the apples just before laying in the pie so that they do not darken.
    Spread apples sliced ​​in slices and evenly distribute over the dough.
  11. Sprinkle apples with sugar and cinnamon to taste.

  12. Collect the dough pieces into a lump and roll them into a circle, on which make small cuts with a sharp knife, placing them in a checkerboard pattern.

  14. Trim the edges that are too protruding and form decorations in the form of buds and leaflets or at your own discretion from the rest of the dough.
    These decorations can be made from the remnants of the dough.
  15. Do not leave the cake for proofing, but immediately grease the surface of the cake with a sprinkled egg with a small pinch of salt.
    Before sending to the oven, the cake should be greased with whipped yolk.
  16. Turn on the oven 180 degrees and put the pie in the cold. While the oven is warming up, the dough has time to rise.This method is called "cold start". On average, a cake is baked for about an hour, but you are guided by your oven and the appearance of the cake: the top should be beautifully browned.
