Benedict Eggs with Crispy  Parma Ham

Ingredients

  • eggs - 4 pcs.
  • butter - 150 g
  • egg yolk - 3 pcs.
  • vegetable oil - 3 tbsp. l
  • wine vinegar - 3 tsp.
  • bacon (Parma ham) - 200 g
  • lemon juice - 1 tsp.
  • bread rolls - 2 pcs.
  • ground black pepper - 1 pinch
  • salt - 1 pinch

Step cooking

  1. We put 150 g of butter in a stewpan and melt it over low heat. In a stewpan drown butter.
  2. Drive 3 egg yolks into a deep container, add 1 tsp to them. wine vinegar and put everything in a water bath. We lay egg yolks in a bowl, add wine vinegar to them and put everything in a water bath.
  3. Continuously beat the eggs with a whisk. Constantly whisk the mass with a whisk.
  4. When the mixture becomes thick, gradually introduce melted butter to it. Enter the melted butter into the egg mass.
  5. Add 1 tsp to the finished mixture. lemon juice, a pinch of salt and black pepper. Whisk thoroughly with a whisk. Add salt, pepper, lemon juice to the sauce and mix.
  6. In a pan with the addition of 3 tbsp. l vegetable oil, fry 200 g of bacon, sliced. Fry the bacon in a pan.
  7. Halve 2 bread rolls and fry them in the same pan where the bacon was cooked. After the bacon, fry the buns cut in half in a pan.
  8. We put a pot of water on the fire and add 2 tsp. wine vinegar. In a saucepan, bring the water to a boil, add wine vinegar to it.
  9. When the water boils, we make a whirlpool in it with a whisk. With a whisk, mix the water to form a whirlpool.
  10. We take 4 eggs and, alternately driving them into a cup, immerse them in the resulting vortex. In the resulting funnel, beat the eggs one at a time.
    Important! Do not immerse more than 2 eggs in boiling water at a time. This will lower the temperature of the liquid and affect the consistency of the protein.
  11. Spread the finished eggs on a paper towel. We transfer the eggs of Benedict to paper towels.
  12. On a browned bun, put slices of ham and cover them with eggs. put slices of bacon on a bun, benedict eggs on top of it.
  13. We pour each egg with the sauce prepared from yolks. Serve the dish on the table. When serving, pour the dish with egg sauce.
