Ingredients

Squid 3 pcs.
Wheat flour 150-200 g
Oregano 5 g
Marjoram 5 g
Paprika 5 g
Dried garlic 5 g
White pepper 2 g
Chili pepper flakes 1 g
Salt taste
Ground black pepper taste
Chilli ½ pcs
Lime juice 30 g
Garlic 3-4 cloves
Parsley 20 g
Homemade mayonnaise 120 g
Vegetable oil 250-300 g

Step cooking

  1. We thoroughly clean and wash three squids under running water. Be sure to remove the insides and rinse from the inside.
    We clean squids, we wash carcasses.
  2. On a large flat plate, mix 150-200 grams of wheat flour, 5 grams of oregano, 5 grams of marjoram, 5 grams of paprika, 5 grams of dried garlic, 2 grams of white pepper, salt to taste and 1 gram of chili pepper flakes. Mix all the ingredients well.
    Mix flour with spices.
  3. Cut the squid and twist it. We make diagonal notches on the inside of the carcasses. We try not to cut through the end.
    On the squid carcass we make oblique incisions.
  4. We also make notches diagonally and in the other direction. That is, we get a net on each carcass.

  5. Peel 3-4 cloves of garlic and put them in a small deep bowl.
    Put the peeled garlic in the mortar.
  6. Cut into small slices half a pod of chili pepper and also send to garlic.
    Cut the chili peppers into rings and add to the garlic.
  7. Add a little salt to the container to taste and grind everything into gruel.
    Add salt and grind the ingredients in a mortar.
  8. Add this pulp to 120 grams of homemade mayonnaise and half lime juice. Thanks to lime, the sauce will acquire a refined sourness.
    Add mayonnaise and lime juice to the chopped ingredients.
  9. Add a little black ground pepper and 20 grams of chopped fresh parsley to the sauce. Mix all the ingredients well and leave to infuse in the refrigerator.
    Add chopped greens and mix.
  10. In a wok pan, pour 250-300 grams of vegetable oil and heat it.
    Warm the vegetable oil in a wok pan.
  11. When the oil is heated, carefully roll one whole squid carcass in flour with spices and put in a pan. Fry each carcass for 1.5-2 minutes.
    Bread squid in flour with spices and spread it in a frying pan.
  12. We put ready squids on a plate covered with paper towels. This is necessary in order to get rid of excess fat.
    Put the fried squids on paper napkins.
  13. Cut the carcass into pieces and transfer to a plate. Garnish and serve with sauce on the table.
    Serve fried squid with spicy sauce.
